Our own little community here in Montana is beginning to open up! Much like another springtime to look to for a little outdoor time, fresh flowers, and the promise of sunshine and good times with family and friends. 

Gardens are being planted, farmer's markets are opening, and social outings planned. I hope these next weeks as they unfold, bring back some joy to your neighborhoods, your family, and you. Corn Moussaka

Is your family tired of the same old ground beef recipes? Looking for something delicious? If so Corn Moussaka needs to be on your dinner table!

This delicious casserole has been a favorite for decades!. It is also different, with the flavors of corn, tomato, and cinnamon coming together harmoniously. I spotted this recipe in a magazine (pretty sure it was Sunset ) over 25 years ago. I have been making Corn Moussaka ever since. The garlic, tomato, and cinnamon flavors are absolutely delicious together. 

This one-dish dinner goes perfect with tossed salad, bread and butter, and a fruit dessert. While there is a couple of step in the preparation, you will have dinner on the table in one hour. A worthy investment of time for a dinner that is not that same old ground beef recipe, again.

We have enjoyed Swiss Chard White Bean and Sweet Potato Gratin many times, and we will again! A vegetable casserole is one of my favorite ways to accomplish getting our daily quota of vegetables. Plus they always taste great! If you are a backyard gardener this recipe is perfect for the upcoming growing season. Swiss Chard is very easy to grow and the seeds can be set now. 


Swiss Chard like most greens cooks down quite a bit, if purchasing at the market you will need 2 large bunches. But to be honest, three would not be too much! I have made this dish with Rainbow Chard as characterized by the yellow stems and Red Chard. If you look closely you can see the difference in the photos provided.

One-Pot Pantry Pasta with Ground Beef is the dish to make when you are hungry, or you want pasta, or when you don't know what to do about dinner, yet again, because it is delicious!

Who wants and needs a simple to make, one-pot dinner that the whole family will love? I should think everyone, that's who! Fortunately, the absolute only preplanning necessary for this dish is remembering to thaw the ground beef, and that is only if you keep it in the freezer! See, this recipe really is a keeper...

One-Pot Pantry Pasta with Ground Beef is completely adaptable. If you like your Ragu on the sweeter side, that's OK. If you love garlic, or possibly not at all (!), that's OK too. If you like more pasta than sauce, even that's OK. Because measuring suggestions have been offered to accommodate everyone with this recipe. All you have to do is stir it up, and serve. Oh and by the way, don't forget the Parmesan!

Morning Oats with Blueberry Maple Compote & Toasted Hemp Hearts

If you are looking for a new breakfast recipe that is a step-up from the usual bowl of oatmeal, Morning Oats with Maple Blueberry Compote and Toasted Hemp Hearts is for you!

Oatmeal is one of those foods that is often scorned as boring, yet incredibly healthy and good for us all! But I can tell you right now, taking a moment to toast the hemp hearts is so worth the effort! They turn into tiny little crunchy bits of warm nutty flavor, perfect for the top of your oatmeal. For those that like dairy with their oats, offer milk or cream on the side.
