British style Mixed Spice for Cakes and Baking

British style Mixed Spice for Cakes and Baking will have you baking up delicious "bakes" just like they do in the countryside of Britain...making this delicious spice blend the one to have on hand!


Here recently I have taken quite a shine to British food. 

Especially Welsh Tea Cake, known as Bara Brith. It is easy to make, and quite delicious. I have come to enjoy my afternoon cup of tea, sweetened with a bit of honey, and lightened up with a splash of cream. And for those days that lunch is but just a memory, a slice of cake spread with a bit of butter is perfect to enjoy along with my cuppa.

The first time I made Welsh Tea Cake I used equal portions of cinnamon and pumpkin pie spice to use in place of the traditional Mixed Spice used in the U.K. It was suggested as an emergency substitution for traditional Mixed Spice, found on a forum thread. And while that first Welsh Tea Cake was delicious, even with my Americanized substitution, I knew I wanted to make real Mixed Spice for future baking. Soon after, I found a recipe for traditional Mixed Spice and planned to stir a batch together for the next loaf. Because I knew I would be making more traditional British baked treats in the future. 



But there was a problem... 

I could not locate my spice grinder to turn the Coriander seeds into ground Coriander, one of the ingredients needed for the spice mix...It took a few days for a replacement grinder to show up at the front door, but as soon as it did, I started grinding! 

This Mixed Spice for Cakes is bright and fruity with Coriander and Allspice. As I sit here, I can smell the latest loaf of Welsh Tea Cake cooling on the counter, and it smells deliciously good. It smells richer and a bit more complex than the first cake I made last time, using my Americanized substitute spice mix. In various British recipes, this spice blend is also known as Cake Spice as well as Pudding Spice. Making your own spice blends is quite fun and oh, so easy. Having a coffee grinder with a 
removable chamber (for easier cleaning!) is the perfect kitchen tool for grinding your own spices and making your favorite spice mixes! 

When ever possible buy whole spices and grind small amounts as needed!

This delicious blend taught me the value in purchasing whole spices for storage and grinding small amounts as needed. Small jars of ground spice are used quickly, usually within six months. Your ground spice will be just as delicious the first time you use it, as that last measure used for your favorite recipe. Grinding your own spice takes but a moment and assures delicious flavor in every dish you make! 


Ingredients needed for this recipe:
  • Cinnamon
  • Nutmeg
  • Allspice
  • Mace
  • Cloves
  • Coriander
  • Ginger
You will also need the following:
  • small jar with a tight-fitting lid
  • measuring spoons
  • small bowl
  • coffee/spice grinder
Now we are ready to begin!

Mixed Spice for Cakes and Baking

1 T ground Cinnamon
1 T ground Nutmeg
1 T ground Allspice
2 t ground Mace
1/2 - 1 t ground Cloves (I used 1/2 teaspoon)
1 t ground Coriander
1 t ground Ginger

Combine all ingredients in a small bowl, stir well to combine. 

Transfer the mixture to a small jar, attach the lid tightly and store in a cool dark area. 

Shake gently before measuring for use in recipes. 


Storage options for British style Mixed Spice for Cakes and Baking. Store in a cool, dry, dark area for up to one year. You may store in the freezer, but do wrap the jar in a sealed freezer bag to avoid taking on moisture.

  2. Yes it's always a great idea to have freshly ground spices. Can you not buy mixed spice where you live? Happily we have it here in the supermarkets.
