Easy and Delicious Beef and Vegetable Soup.

Don't forget dinner! Speaking for myself, I have, especially on busy days, and gosh that really throws a wrench into the end of the day. Easy and Delicious Beef and Vegetable Soup will help on the busy days ahead, with dinner for today, and a carton of soup to put in the freezer for the next busy day...


Busy times require easy-to-make meals, that also taste delicious! 

And this time of year (or any time really!). you just can't go wrong with soup! This Easy and Delicious Beef and Vegetable Soup is just the recipe you need. It makes enough for dinner tonight and some to tuck away in the freezer for another day. And did I mention there are lots of vegetables in this soup? Simply add some bread and butter on the side and fresh fruit for dessert. And call the family to dinner. 

We had this for dinner last night and yes there is a carton in the freezer for another day. Easy and Delicious Beef and Vegetable Soup is also quite adaptable. Just substitute a can of Mexican flavored tomatoes in the recipe for a delicious Tex-Mex soup. Then serve with a bit of sour cream and corn tortillas. Or how about Italian flavored tomatoes and serve with a dollop of pesto and crusty bread to go along with all that warm and comforting broth? There really is no wrong way to make this soup...

Quite possibly ground beef has never tasted this good!

Easy and Delicious Beef and Vegetable Soup is also frugal, and we all can use more recipes like that. This delicious pot of soup calls for ground beef and is simmered in the slow cooker, leaving you free to go about your day and get everything done. Yep you heard that correctly, everything done. A quick sauté of the ground beef, along with the onions and garlic is all the stove time necessary. And should you find you do not have a full two pounds of ground beef, just use what you do have. My guess is, no one will even notice. So how about we get cooking?


Some thoughts on this recipe:

Don't like potatoes in your soup? No problem, add a cup of barley or brown rice, in their place.

Feel free to add any herbs you love, bay leaf, thyme, and marjoram sound like tasty choices! 

Or if you are a pesto fan, like I am, you may enjoy this one, or this one, or even this one! With this many recipes, you always have a choices!

Vegetables are the star in this soup, so use the ones you love best. The suggestions given are not written in stone. When cooking for your family, feel free to make it your own!

Only have one pound of ground beef? No problem add two cups of cooked beans a few minutes before serving. Home cooked or canned and drained, both work great.

This recipe will require a 6qt slow cooker. 


Ingredients needed for this recipe:
  • ground beef
  • Yukon gold potatoes
  • canned tomatoes
  • onion
  • garlic
  • carrots
  • green beans
  • corn
  • beef stock or bouillon
  • olive oil
  • salt
  • pepper
You will also need the following:
  • large skillet
  • kitchen knife
  • cutting board
  • measuring spoons
  • measuring cups
  • kitchen spoon
  • vegetable peeler
  • 6qt slow cooker
Now we are ready to begin!


Easy and Delicious Beef and Vegetable Soup, served with a touch of pesto.

Easy and Delicious Beef and Vegetable Soup
by the seat of my pants

2 pounds lean ground beef
1 large onion
3 - 4 cloves garlic
herbs if desired, see above suggestions
olive oil
4 medium-sized Yukon Gold potatoes - we did not peel
4 large carrots - peeled if desired
2-3 c cut green beans - we used frozen
2 c corn - we used frozen
1 can 14-16 oz. crushed tomatoes, plain or flavored
4 - 6 c beef stock or bouillon
2 t salt
fresh ground pepper

Wash and cut the potatoes into small pieces, set them aside. Prepare the carrots, peeling if desired. Slice and set them aside. Measure and set aside the green beans and corn. 



Peel and dice the onion, mince the garlic. Add a small amount of oil to the skillet, add the diced onion along with the garlic and the ground beef. Sauté over medium heat until meat is mostly cooked, and the diced onion pieces are softened. 


Place the cooked meat mixture into the bottom of the slow cooker, next add the potatoes, then remaining vegetables. 

Season with salt and fresh ground pepper. Top with the tomatoes followed by beef stock to cover. 



Cover the slow cooker, cook on low 6 to 8 hours, checking after 6 hours cooking time. The potatoes should be cooked, but still firm. Serve.

Storage options for Easy and Delicious Beef and Vegetable Soup.  Store covered in the refrigerator for up to three days. Freeze for longer storage. Let thaw in the refrigerator before reheating.

  10. This looks wonderful. I love pesto. This reminds me a little of a garden vegetable with pesto copycat recipe I use (a soup from Panera Bread). The pesto is the most amazing flavor with all those veggies. Visiting from Sweet Tea & Friends.
