Beet and Apple Salad with Feta and Walnuts, too delicious to only serve in the fall. Next time you see fresh beets in the marketplace, grab a couple of bunches and make this salad!
I have always been a hunter of the next delicious recipe to try, always.
In previous years I would turn to my large collection of cookbooks and enjoy the hunt. But with each move, I have sorted and gifted many cookbooks to folks I love, charity thrift stores and simply free on a community yard sale page on social media. At one time I had over 3000 cookbooks and loved having every one of them! But moving will give pause to what is absolutely important to pack up (again!) and what can be gifted. My collection now is so much smaller and contains basic topics such as whole grain baking, canning and homesteading.
For general everyday recipes I enjoy hunting over the internet.
And even when culling out the ads it is an enjoyable time for me. And that is where I was inspired to make this delicious Beet and Apple Salad with Feta and Walnuts! When I was at our local market they had fresh bunches of beets. We enjoy buttered beets, but I enjoy a delicious beet salad even more. My usual routine is to cook the beets in my Instant Pot for using in another meal and the beet greens on the stove for that nights dinner. The cooked beets store nicely in the fridge for a couple days while I decide how we might like to eat them.
And today, it was time to consider the cooked beets...
When I first began my search I realized that most of the recipes found made a reference to beets being the perfect fall vegetable. But honestly here we were in July with these beautiful bunches of beets at my little grocery store, ready to purchase and enjoy.
Except for this one recipe, that explained that this beet salad is perfect with a barbeque! I knew right away that I had found my beet eating soulmate! And the best part after enjoying this for dinner, is that, not only is she right, but when can I make a barbeque to enjoy with this delightful salad? Because always, a simple dressing along with delicious fresh ingredients always makes for a wonderful dining experience.
Some additional thoughts on this recipe:
We did not peel the apples, but feel free to remove the peel if desired.
Like most salads with vinegar in the dressing, the flavor fades the next day, you may want to add a touch of vinegar to the leftovers to brighten the flavor.
Ingredients needed for this recipe:
- beets
- apples
- Feta cheese
- walnuts
- olive oil
- red wine vinegar
- mustard
- salt
- freshly ground pepper
You will also need the following:
- kitchen knife
- cutting board
- medium sized mixing bowl
- measuring spoons
- measuring cups
- silicone spatula
- serving dish
Now we are ready to begin!
Beet and Apple Salad with Feta and Walnuts
4 medium beets
1 large or 2 medium apples
1/4 c olive oil
2 T red wine vinegar
1 t mustard
1/4 t salt
fresh ground pepper to taste
1/2 c crumbled Feta
1/2 c walnut pieces
Peel the cooked beets and set aside. Wash and dry the apples. Cut the apples in half and then into quarters. Remove the core and dice into 1/2 inch pieces. Dice the cooked beets into 1/2 inch pieces.
In a medium sized mixing bowl, place the olive oil, red wine vinegar, mustard, salt and freshly ground pepper. Mix the mustard into the other ingredients. Add the diced beets and apples, gently mix together.
Turn the beet apple mixture into the serving dish, top with the Feta cheese and the walnuts. Chill until serving time.
Storage options for Beet and Apple Salad with Feta and Walnuts. Store covered in the refrigerator for up to three days. Do not freeze this dish.
