Hello and Welcome!
We have been fighting with smokey air in these parts, having been in "fire season" for the last month. Some days our AQI is as high as 188...I can only imagine the conditions that the firefighters are enduring as they work to save our forests...each day I pray for rain to help get the air clear enough to breathe and help put out the fires.
A couple of homestead projects I am working on include a second attempt at growing potatoes in the hay bales I had purchased, and making pineapple vinegar from the peeling and cut-away trimmings. Actually, this is a second attempt at pineapple vinegar also. We have been enjoying fresh pineapple on the grill with some of our dinners this past month.
I am learning that vinegar actually takes a long time, and it is not unusual to get a growth of what appears to be mold on the top of the liquid. As I learn more about vinegar making, I am surprised to find that often it is NOT mold. Yikes, I probably did not need to pour the first batch out! Learning to ferment food has been my biggest challenge. My Dad made it look so simple when I was a kid!
