Little Almond Wafers, the perfect treat to enjoy! Not too sweet, buttery and delicious!
Even when following a specialized eating plan. I have been fairly quiet about it, and will continue to do so. But I am currently following a Low Histamine eating plan. I already feel so much better and will get to the bottom of Histamine Overload, in time. But during this journey I still want a bit of dessert! But don't we all from time to time? Dessert used to be my main focus years ago when I held my Sunday dinners on the last Sunday of each month. Often making three or four choices. But honestly even back then, I only had room for one selection!
My husband is the great dessert eater in our house!
With chocolate being his personal dessert best friend! Or ice cream. Apparently ice cream solves all issues with the world, even the car engine when it is making a funny noise, LOL. And yes, you are correct, chocolate ice cream with chocolate sauce on top is the total prize in the dessert wars. Oh no, the war is not between the two of us, because there is no one easier to bake for when they love chocolate. No the war is with his choices, and which one will win as dessert for the night.
I on the other hand enjoy a more subtle dessert,
where you can taste the individual ingredients included in the recipe. Like these Little Almond Wafers. They are tender, buttery and just the right "bite" of deliciousness when dessert won't leave your mind after a lovely dinner at the table. They are also perfect to serve beside a fruit compote, this Easy Peach Compote comes to mind! Or you could sandwich them together with raspberry jam...but no matter how you serve them, they are quite delicious! With no special ingredients save the almond flour which is available in every baking aisle in ever store.
Let's make Little Almond Wafers, shall we?
Ingredients needed for this recipe:
- almond flour
- sugar
- butter
- vanilla
- salt
- whole almonds
You will also need the following:
- medium mixing bowl
- whisk
- kitchen fork
- measuring cups
- measuring spoons
- small bowl
- baking sheet
Now we are ready to begin!
Little Almond Wafers
inspired by Kalyn's Kitchen
350-degree oven
1 cup almond flour
1/4 c sugar
3 T butter, soft at room temperature
1/8 t salt
1/2 t vanilla
small handful whole almonds
Place the whole almonds into a grinder of some sort. I use a small countertop coffee grinder with a removable cup. Grind to a flour consistency.
Turn the ground almonds into a small bowl. and stir with a fork. They most likely clumped together when ground. Remove any large pieces of almond left behind.
In the medium mixing bowl, place the almond flour, sugar and salt. Whisk together. Add the butter and vanilla. Use the kitchen folk to mix the dough together.
Divide dough into 12 pieces. Roll into a ball, then roll in the ground almonds.
Place the prepared cookie dough balls on a buttered cooking sheet. Use the kitchen fork to press the cookies into a wafer shape.
Bake for 9 to 10 minutes. Watch carefully so that the cookies do not over brown.
Let cool on the baking sheet for 5 minutes. Then remove and cool on toweling, for this batch of cookies I did use a paper towel.
Storage options for Little Almond Wafers. Store at room temperature for up to 5 days, but trust me they will not last that long!
