Roasted Apples and Onions with Thyme and Bacon, a breakfast or brunch treat!

Roasted Apples and Onion with Thyme and Bacon is not a recipe for the faint of heart! Because it asks you to fry the bacon in butter! But I ask you to simply put on your chef's hat and fry, away! Because this is not a recipe to be missed, and perfect for a weekend breakfast...


Even with my usual well stocked pantry, I had to pick up slab bacon!

For this recipe, we had to do a bit of shopping. While our motto is to, cook with what you have, we did not have slab bacon. Quickly remedied, however, when we went to the market. We purchased jowl bacon, and while the recipe calls for belly bacon, it jowl bacon worked out just fine. With bacon in hand, it was time to make Roasted Apples and Onions with Thyme and Bacon!

While the combination of ingredients seems mismatched, this is so good!

In the land of food blogging you offer a recipe that you know is delicious and you are really sure that if you could only get your reader to try it, they will love it too! But there is no way to explain that fruit, onions, and bacon with thyme is the one to try, because it seems an odd combination. But honestly, this IS the one to try! This recipe was found by my husband, who is a happy eater and an excellent judge of good food. 

Once out of the oven, fry some eggs, and pour the coffee!

It dish is herb-y, well-textured, and overall, just plain delicious! This is the dish to make any time you want something more delicious than the sum of its parts, because this 9X13 pan of Roasted Apples and Onion with Thyme and Bacon, is exactly that! When it comes out of the oven, fry some eggs, toast some bread, and call everyone to breakfast, or dinner because this pan of deliciousness is at home for either meal.
 

Ingredients needed for this recipe:
  • bacon
  • onions
  • apples
  • butter
  • salt 
  • pepper
  • thyme
You will also need the following:
  • kitchen knife
  • paring knife
  • cutting board
  • tongs 
  • cast iron skillet
  • 9X13 baking pan
  • small bowl or measuring cup
Now we are ready to begin!



Roasted Apples and Onions with Thyme and Bacon

a stovetop and a 400-degree oven

5-6 large apples 
2 yellow onions
1 pound slab bacon, sliced into 8 or more thick slices
2 T butter
Salt and freshly ground pepper
1 T fresh thyme leaves, crumbled OR  1 t dried thyme leaves, crumbled

Wash and cut the apples into thin wedges, peeling is not necessary. Slice the onions thinly, setting both the apples and onions aside.



Slice the bacon into 8 or so slices, season with salt and pepper on both sides. 

Melt the butter in a 12-inch skillet (we used cast iron) add the bacon and cook, until golden. Set bacon aside.
 



Drain off excess fat to a small heatproof bowl.



Using the same skillet, add onions and sauté until golden, use the reserved butter/bacon fat as needed. 

Sprinkle with the thyme, and the apple slices, toss well. 


Place apple/onion mixture in 9X13 pan. Bake at 400 degrees 10 minutes, stirring once, continue baking 10 more minutes.



Remove from oven, gently push the apple and onion mixture to the side of the pan, add the reserved bacon. 

Return to the oven to bake an additional 10 minutes. Serve!


Storage options for Roasted Apples and Onions with Thyme and Bacon. Store covered for up to three days in the refrigerator. I do not recommend freezing this recipe.
