Coming up with the introduction to this recipe was difficult. Why? How can you say that stewed anything is the way to go for real food, made ahead, and ready with you are? Without screaming boring, or old fashioned. Well actually you can't. Which turns out to be a good thing, because delicious food, made ahead is the perfect old fashioned in our modern world. And exactly what you need to do! Come and take a look at Honey Stewed Apple Chunks...
It was my daughter who sent me a video of a younger cook making stewed apples.
She thought they might be something I would enjoy, making ahead to keep on hand for snacks or to enjoy with a meal. Now I have to be completely honest. My first thought was that, I already have applesauce in the house. So why would I make this recipe? And then one day here recently when we did the marketing for the month, as usual on the grocery list was apples. And of course they went into the cart, just like they do each month when we do our major stock up. /then when we got home...
I discovered that we had not been eating apples as quickly as was our usual pace.
And now I had not only a new bag of apples from shopping that day, but almost a full bag of apples in the fridge to do something with. And in a desperate attempt to empty the fridge of the apples we already had, to make room for the apples we just bought. I remembered the video and made Honey Stewed Apple Chunks. Which sounds more complicated that it really is...
First off, I did not follow the video!
Because I didn't have time to use the stove and lovingly tend to the apples. Since I always wash the apples before they go into the fridge. All I had to do was to cut them in half, and then into quarters. Removed the cores, cut down the middle once again and crosswise into small bite sized chunks. Tossing the chunks into the slow cooker before moving on to the next apple piece. Once all the apple pieces were chunked, I drizzled them with some honey. Covered the apples and set the control to low. About three hours in, I could smell the most wonderful apple smell!
From there I gently stirred bringing some of the bottom apple chunks to the top.
Turned off the heat, recovered the slow cooker and let the apples cool a bit before turning them into a storage container with a lid. And into the fridge they went. But trust me, they did not stay in the fridge very long. A dish of Honey Stewed Apple Chunks is a wonderful snack. At any time. Real food, no refined sugar and high in beneficial fiber. Yesterday I made another batch!...You can make them as sweet as you wish, but do let the natural apple flavor be the star of the show!
Some additional thoughts on this recipe:
You may substitute real maple syrup for the honey. Since honey is sweeter, you will want to use the larger amount.
Yep cinnamon would also be welcome in this recipe!
Any type of apple works great. I have so far made this with Gala apples and Ambrosia apples.
And yes, you may adjust the honey to be appropriate to the sweetness (or lacking there of) of the apples being used.
We do not peel the apples for this recipe, but you may if desired.
You will easily know when the apples are cooked, by the delicious smell you get to enjoy!
Ingredients needed for this recipe:

You will also need the following:

Honey Stewed Apple Chunks
by the seat of my pants!
2 pounds of organic apples
1/3 - 1/2 c honey
Wash and dry the apples. Cut into half and then quarters. Remove the center core. Cut once again lengthwise and then crosswise into bite sized pieces.
Place the apple chunks into the slow cooker. Drizzle with the honey. Set control to low and let cook about 3-4 hours. You will be able to smell that the apple chunks are cooked, they smell heavenly!
Turn off the slow cooker. Open and stir the apple chunks gently, replace the lid and let them finish cooking and cooling. When the apple chunks have cooled down a bit, turn out in to a covered container and refrigerate.

I love apples and honey - great slow cooker recipe. FYI, experts say you should not wash fresh apples until ready to eat as they have a natural protection on the skin. This helps keep them fresh longer. #MMBC
