I have been eating my Powered Up Oatmeal for a couple of months now. But in all honesty I was missing the occasional bowl of granola. And since breakfast is quite important to me, I decided there was only one thing to do. Develop a granola recipe using the powered up method! Welcome to Powered Up Honey Almond Granola.
Nutritionally for me, breakfast is important to start my day.
I know many routinely skip breakfast. But having protein and fiber in my gut, helps to heal my gut! Having spent the last two decades with a wonky gut in need of healing. Being able to eat, still work hard, and heal at the same time is important. But the truth is we all need fiber. not just older people. And while it is not a subject that is often tackled on a food blog. In my humble opinion, it should be. Without fiber your gut will in time, loose it's ability to completely digest food. Which starts in the gut, but continues on through the entire lower tract. Nutrition will not be complete. And that is important to understand.
Some fibers are easier to digest than others, but soluble fiber is good for everyone.
And you need some everyday. It won't surprise you to hear, oatmeal is a good starting point. As well as oat bran and barley. Why? Because they all have soluble fiber, which is some of the best for your gut. Along with beans, apples, and carrots. In our house we eat as many vegetables as we can unpeeled. Yep they all offer fiber, which we need, and fiber is the best reason to not peel everything! But is taste put after the need to get fiber? Not around here! Taste is first on my recipe development list, and choosing the ingredients to use, well that comes next.
Powered Up Honey Almond Granola was made yesterday and it is so good!
Needless to say I will be developing a Powered Up version of all my favorite granola flavors! There is absolutely no reason not to. Not only is granola a wonderful breakfast but a handful makes a great snack. And when it comes to breakfast or any healthy snack, one flavor is not enough! In all honesty no one eats healthy unless the food tastes good! And because time is also on the line, is fairly easy to make. And to take it even further on the snacking side of granola, this new granola recipe is the perfect ingredient for Honey Almond Granola Bites...so now, let's make some Powered Up Honey Almond Granola!
Some additional thoughts on this recipe:
The egg coating does require a longer baking time than my other granola recipes.
As with all honey sweetened granola recipes, you will need to stir this once it is out of the oven to avoid one large granola bar from forming in the baking pan.
And lastly, this does call for organic wheat bran, feel free to leave it out, if desired. While not soluble it is still a great fiber to add to granola.
Ingredients needed for this recipe:
- organic old fashion oatmeal
- organic oat bran
- organic wheat bran
- eggs
- honey
- almonds
- coconut shreds
- pumpkin seeds
- coconut
- salt
- coconut oil
- vanilla
You will also need the following:
- large mixing bowl
- 9X13 baking pan
- measuring cups
- measuring spoons
- silicone spatula
- storage container
Now we are ready to begin!
Powered Up Honey Almond Granola
by the seat of my pants!
350-degree oven, then 300-degree oven to finish
2 c old fashioned oats
1/3 c oat bran
2 T wheat bran
2 eggs
3/4 c chopped almonds or halves
1/2 c coconut shreds
1/2 c pumpkin seeds
1/8 t salt
1/2 t vanilla
1/4 c coconut oil, melted and cooled
1/2 c honey
In a large mixing bowl, combine the oatmeal, oat bran, wheat bran and the eggs. Stir together well making sure that everything is coated with egg. Set aside for 15 minutes for the oats to absorb the moisture from the eggs.
Stir the oat mixture and add the remaining ingredients, almonds through vanilla.
Add the honey and coconut oil and carefully stir until they are evenly mixed into the dry ingredients.
Turn into a prepared 9X13 baking pan. Bake at 350-degrees for 20 minutes. Stir the mixture, bringing the ingredients from the corners of the pan to the center. Bake another 10 minutes. Stir once again.
Reduce oven heat to 300-degrees, bake for 10 minutes, stir again. Bake another 10 minutes and again bring the ingredients from the corners of the pan to the center. Bake for a final 10 minutes.
Remove from the oven, set a timer for 5 minutes, stir. Reset the timer for 10 minutes, stir and repeat. Let granola cool completely and transfer to a storage container with a tight fitting lid.
Storage options for Powered Up Honey Almond Granola. Store in a tightly covered container for up to two months at room temperature. You may also store granola in the freezer for a longer storage time.
