Easy Oven Baked Whole Wheat Pancakes with Warm Apple Sauce, Vanilla Yogurt, and Crunchy Granola

Out of syrup? Don't let that stop you from making a delicious pancake breakfast! Easy Oven Baked Whole Wheat Pancakes with Warm Apple Sauce, Vanilla Yogurt, and Crunchy Granola to the rescue!


Pancakes are so widely loved there is even a national Pancake Day!

Pancakes are one breakfast item with endless variations! Most folks think of delicious additions to put in their pancakes, but I also like to think about what to put on them...which is how I came to enjoy this plate of Easy Oven Baked Whole Wheat Pancakes with Warm Apple Sauce, Vanilla Yogurt, and Crunchy Granola. I know that is a long name for such an easy to make dish, but this one is worth all those letters! 

This is my healthy take on the "one cup pancakes" recipe.

This recipe is based upon the original "one cup pancakes" from Jamie Oliver. We have been eating our whole wheat version for years and years. But it wasn't until we hit the road in our little RV that I came upon the idea of baking them! One morning I was running late, and I did not have time to cook the pancakes one by one! I threw them in the oven, got ready for my volunteer shift. Now I never make them any other way.  


We love just about everything on our pancakes. 

Without a doubt, pancakes with maple syrup are a delicious breakfast any time you serve them. Often we will have pancakes for dinner, along with an egg or two. And for some families to stray from the pancake tradition enjoyed by so many for so long is unthinkable...but why not try something just a little bit different? Starting with a pancake breakfast that is a little bit easier? And this easy trio of flavors will do just that! 

Plus with oven baked pancakes, everyone eats at the same time. 

Once you stir up the pancakes and put them in the oven, the apple sauce pretty much cooks itself. Once out of the oven, grab a carton of vanilla yogurt and your favorite granola and let the morning begin. Just the smell of Easy Oven Baked Whole Wheat Pancakes with Warm Applesauce, Vanilla Yogurt and Crunchy Granola will spark your appetite and start your day off on a bright note. If you have a mind to, add a fried egg or two to the side of your plate. 


Some thoughts on this recipe:

This recipe as written, makes 6 medium sized pancake pieces. Perfect for two or three people. 

The recipe is easily doubles and will bake in a 9X13 pan, simply adjust the baking time. Pancakes will also be a little bit thicker. 

And the answer is yes, you may drop blueberries or sliced bananas or even crumbled bacon into the batter before the pan goes into the oven...

Ingredients needed for this recipe:

  • Whole Wheat Self-Rising Flour
  • egg
  • milk
  • vanilla
  • apple sauce
  • brown sugar
  • cinnamon
  • vanilla yogurt
  • granola
You will also need the following:
  • medium-sized mixing bowl
  • small saucepan
  • 7X11 baking pan
  • measuring spoons
  • measuring cups
  • stirring spoon
Now we are ready to begin!

Easy Oven Baked Whole Wheat Pancakes: 
1 c Whole Wheat Self-Rising Flour, you can find our recipe here.
1 egg
1 c milk
vanilla

Warm Apple Sauce:
3/4 c unsweetened applesauce
1/4 c brown sugar
1/4 t cinnamon

1/4-1/2 c vanilla yogurt

1/4-1/2 c your favorite granola or you might like this one!


To make the pancake batter, combine the whole wheat self-rising flour, egg, milk, and a splash of vanilla in a medium-sized mixing bowl. 

Mix only until there are no dry areas and no wet areas in the batter. A few lumps are fine. 

Pour into a prepared 7X11 pan and bake for 20-25 minutes. While the pancake is baking make the Warm Apple Sauce. 

In a small pan combine applesauce, brown sugar, and cinnamon, bring to a simmer, stir until sugar has dissolved. Set aside to cool slightly.

To serve, cut the pancake into squares, place pancake pieces on the serving plate. 

Add a swirl of yogurt, a spoonful (or 2!) of Warm Apple Sauce, and garnish with the granola. Serve.

Storage options for Easy Oven Baked Whole Wheat Pancakes with Warm Apple Sauce, Vanilla Yogurt and Crunchy Granola. Store the leftover pancakes for up to three days in the refrigerator in a covered container. The applesauce, yogurt, and granola will also need to be stored separately.
