Favorite Honey Chicken Skillet.

Don't let failed plans get the best of dinner. There is always another way to get dinner on the table...which is how we came up with Favorite Honey Chicken Skillet!


Favorite Honey Chicken has been enjoyed by our family for a number of years. 

Ever since the time my husband made it when we lived on the upper coast of Washington state, about eight years ago. He had just retired, but I was still working and commuting across the Columbia River into Oregon, to work in the town of Astoria. One day while I was at work, my hubby got out the slow cooker and made dinner! What He made was, Favorite Honey Chicken from Fix It and Forget It, New Cookbook. It is a sweet-ish dish made with honey, curry, mustard and onion for flavor. It is quite good, and a long time favorite of my husband's. We have enjoyed it several times through the years between living in Washington state and now, here in the state of Texas! 

Currently we are so so busy with getting in the garden, that...

Dinner is often the last thing I think of. Sad but true. I do follow a usual schedule of wake up, breakfast, get meat from the freezer (with a general idea of how it will be cooked) and then, get busy outside! It will not surprise you to learn that a couple of days ago, it was dinner time (Again? Didn't I just cook yesterday?) and I hadn't a clue how I was going to get it cooked and ready on time. Because I had completely skipped getting the ingredients into the slow cooker after breakfast. Yes, we were set to have Favorite Honey Chicken...



But we were hungry, having worked hard for most of the day. What to do, what to do...

I still wanted to make Favorite Honey Chicken, for a couple of reasons. One, we hadn't had it in quite some time, so it would be fresh, a "new" flavor to enjoy for dinner. And because it had already been decided, I wanted to follow through with that choice for our dinner. Sooooo. A different cooking method was needed, and honestly needed now! It was a little after 5pm and we usually have dinner at 6ish after taking care of the hens and closing up the shop for the night. 

Enter Favorite Honey Chicken Skillet

And I have to be honest with you, I actually prefer this version! While I love the convenience of a slow cooker for many things, this dish is fresher when made in a skillet, and those carrots, they were a good decision also! We like to serve this with brown rice, and of course I have shared links to our favorite brown rice cooking methods, above. And just like that, I think we have new favorite...


Some additional thoughts on this recipe:

Be sure to use the amount of curry your family will enjoy. 

Let the chicken brown to a rich color for that extra punch of flavor. 

Curry is one of those spices some love, some do not. We are new to curry not having grown up eating curry. We use the smaller amount in all curry recipes offered. 

Serve with rice, we suggest Brown Rice in the Pressure Cooker, OR Coconut Brown Rice, also a pressure cooker recipe.


Ingredients needed for this recipe:
  • Chicken thighs
  • Honey
  • Curry Powder
  • Butter
  • Onion
  • Salt
  • yellow mustard
  • Carrots
You will also need the following:
  • Large skillet, with lid
  • measuring cups
  • measuring spoons
  • kitchen fork
  • small bowl or glass measuring cup
  • peeler
  • serving platter
Now we are ready to begin!




Favorite Honey Chicken Skillet

4-6 chicken thighs, we used skin on, bone in
1 T butter
1/2 c chopped onion
1- 3 t curry powder, use as your family will enjoy.
1 T yellow mustard 
1/4 c honey
2 T hot water 

Add the butter to the skillet, melt over medium high heat. Add the chicken thighs, skin side down. Let the thighs cook until a rich golden brown. Turn the thighs over, add the chopped onions to the center of the pan, season with salt, and brown the second side. 



While the chicken is browning, peel the carrots. 

And stir the sauce together! In a small bowl or measuring cup, combine the honey, mustard, curry powder and the hot water. Stir until the honey melts into the other ingredients and sauce is smooth. 




Add the peeled carrots to the skillet with the chicken. Pour the sauce over all of the ingredients in the skillet. 

Cover with a lid, reduce heat to medium low and let simmer for 20-30 minutes or until tender when pierced with a fork. 

Remove the lid, turn the heat up to high and simmer off the sauce until it has reduced to a sauce. 


Remove the chicken from the skillet and arrange on a serving platter with the carrots. Pour the sauce from the pan over the platter of chicken and carrots. Serve!

Storage options for Favorite Honey Chicken Skillet. Store for up to three days in the refrigerator. I do not recommend freezing this dish, due to texture changes when thawed and reheated.

  1. This would make a great recipe for Rosh Hashanah, the Jewish New Year since we eat honey during the holiday to wish for a “sweet new year”. I can't use butter with the chicken though, since we don't eat milk and meat together. #MMBC

    1. Lisa, the butter is only to brown the chicken, by all means use what you prefer, I enjoyed this dish very much. My husband, even more so!
