Slow Cooker Scalloped Potatoes and Ham, the perfect meal to make when you are knee-deep in a house renovation, getting the garden weeded and replanted or just busy with life in general...it is pretty much a "hands off" dinner that cooks it's self once you put the ingredients into the slow cooker...and don't we all need a recipe or two like that?
Last week we took some time (OK, more time than we thought it would take! But dang if those home improvement projects don't always run long on time and money!) and did a little refresh to the kitchen. When I took a look at the wasted steps it took me to take to make dinner, I knew instantly that I had not put things away in an efficient manner. The pots and pans were mixed in with food storage, and I it seemed that I would have to unload something from somewhere to actually get to what I needed. Not a productive way to organize, much less get something done in the kitchen. And honestly where there are outside chores needing done, I want to be out there helping.
And of course with the weather warming up (thank goodness!) I don't want to be inside. There are so many things I want to do outside, along with the things that simply cannot wait any longer. Like the wall studs in the old shop building my husband trying to save with a bit of remodeling. A few need to be replaced due to rot, and what with taking the siding off the building and then replacing the studs, and reattaching the siding, this will take a few days.
Hearty food for hard workers.
Meals on days like this are not four-star affairs, but they remained delicious none the less. One day it was an odd collection of frozen packages of leftovers from the freezer. Tasty but quite eclectic! A buffet of choices, if you will. And then I remembered my mom's One Pan Pork Chops and Scalloped Potatoes and thought, why not with ham, and use a slow cooker? So we did! I put it together in the same way, layering the ingredients, and topping with some shredded cheddar. I put it all in the slow cooker and let it cook while I went back to helping in any way I can.
And Slow Cooker Scalloped Potatoes and Ham turned out delicious! Moister than oven-baked which I really enjoyed. So good in fact, I thought I would better share the recipe. Because there is nothing like easy-to-make scratch-cooked food to nourish and possible ease the builder blues that can come along with any home improvement project, no matter how wonderful it turned out!
Some thoughts on this recipe:
Cook for the first three hours with the lid on, and turn the lid 90 degrees to allow for a little evaporation of the pan juices from the ham, until done to your liking.
You will not need salt, the ham offers plenty of added flavor.
Allow the Slow Cooker Scalloped Potatoes and Ham to rest for 30 minutes before serving, because the potatoes are really hot!
Ingredients needed for this recipe:
- potatoes
- ham
- whole wheat flour
- garlic salt
- pepper
- onion
- olive oil
- evaporated milk
- cheddar cheese
You will also need the following:
- a large slow cooker
- cutting board
- kitchen knife
- grater

8 medium potatoes
Ham
1 large onion or 1 generous cup of Diced and Ready to Use Frozen Onions
olive oil
garlic salt
fresh ground pepper
1/4 c whole wheat flour
2 12-oz cans of evaporated milk
cheddar cheese, as desired, grated
Sauté the diced onions until translucent, and set aside to cool. Dice the ham, and set it aside.
Wash and slice the potatoes, and place half of the sliced potatoes in the bottom of the slow cooker.
Season with garlic salt and fresh ground pepper. Add half of the sautéed onion and half of the whole wheat flour.
Add all of the diced ham. Top the ham with the remaining onions. Sprinkle with the remaining whole wheat flour.
Place the last of the sliced potatoes on top and season with garlic salt and fresh ground pepper.
Open the cans of milk and pour over the sliced potatoes. Cover and cook for 3 1/2 hours on high heat.
Remove the lid, and sprinkle with grated cheddar cheese. Let cook until tender, 30 to 60 minutes. Let rest for 30 minutes before serving.
Storage options for Slow Cooker Scalloped Potatoes and Ham. Store covered in the refrigerator for up to three days. You may freeze for a longer storage time, but do expect some loss of texture when thawed.
