Slow Cooker Scalloped Potatoes and Ham, the perfect meal to make when you are knee-deep in a house renovation, or just busy with life in general...it is pretty much "hands off" once you put the ingredients into the slow cooker...
Last week we took some time (OK, more time than we thought it would take! But dang if those remodeling projects don't always run long on time and money!) and did a little refresh to the kitchen. The old-style Formica laminate backsplash was chiseled off along with the old countertops and traded out for ceramic tile backsplash and butcher block countertops.
"We" is a rather loose term, it was mostly our son-in-law and daughter doing all the hard work. But we stood on the sidelines oohing and ahhing at the progress, helping with the baby, and making meals for everyone to enjoy. Along with sweeping up rubble, washing actual dishes, helping with the laundry, as well as more oohing and aahing as the progress took place!

Meals were not four-star affairs, but they remained delicious none the less. One day it was an odd collection of frozen packages of leftovers from the freezer. Tasty but quite eclectic! And then I remembered my mom's One Pan Pork Chops and Scalloped Potatoes and thought, why not with ham, and use a slow cooker? So we did! I put it together in the same way, layering the ingredients, and topping with some shredded cheddar. I put it all in the slow cooker and let it cook while I went back to oohed and aahhhed some more!
And Slow Cooker Scalloped Potatoes and Ham turned out delicious! Moister than oven-baked which I really enjoyed. So good in fact, I thought I would share the recipe. Along with a photo or two of the refreshed kitchen in the main house. Because there is nothing like easy-to-make scratch-cooked food to ease the builder blues that can come along with any home improvement project, no matter how wonderful it turned out!
Some thoughts on this recipe:
Cook for the first three hours with the lid on, and turn the lid 90 degrees to allow for a little evaporation of the pan juices from the ham, until done to your liking.
You will not need salt, the ham offers plenty of added flavor.
Allow the Slow Cooker Scalloped Potatoes and Ham to rest for 30 minutes before serving, because the potatoes are really hot!
Ingredients needed for this recipe:
- potatoes
- ham
- whole wheat flour
- garlic salt
- pepper
- onion
- olive oil
- evaporated milk
- cheddar cheese
You will also need the following:
- a large slow cooker
- cutting board
- kitchen knife
- grater
Now we are ready to begin!

8 medium potatoes
Ham
1 large onion or 1 generous cup of Diced and Ready to Use Frozen Onions
olive oil
garlic salt
fresh ground pepper
1/4 c whole wheat flour
2 12-oz cans of evaporated milk
cheddar cheese, as desired, grated
Sauté the diced onions until translucent, and set aside to cool. Dice the ham, and set it aside.
Wash and slice the potatoes, and place half of the sliced potatoes in the bottom of the slow cooker.
Season with garlic salt and fresh ground pepper. Add half of the sauteed onion and half of the whole wheat flour.
Add all of the diced ham. Top the ham with the remaining onions. Sprinkle with the remaining whole wheat flour.
Place the last of the sliced potatoes on top and season with garlic salt and fresh ground pepper.
Open the cans of milk and pour over the sliced potatoes. Cover and cook for 3 1/2 hours on high heat.
Remove the lid, and sprinkle with grated cheddar cheese. Let cook until tender, 30 to 60 minutes. Let rest for 30 minutes before serving.
Storage options for Slow Cooker Scalloped Potatoes and Ham. Store covered in the refrigerator for up to three days. You may freeze for a longer storage time, but do expect some loss of texture when thawed.
