My Personal Favorites from 2023.

I did a personal recap of my personal favorites, just like this one last year as well. For me it is a look back on what I have learned, about myself in the kitchen, how to manage our pantry, our meals and our food budget better. The posts I have chosen are not the most popular, they are the most meaningful for the lesson, the enjoyment or the fun. I invite you to come and take a look...




All of the following recipes were created and enjoyed in 2023. And for most of that time we were on the road, first traveling as Park Volunteers and later traveling and exploring with no home to go back to, from winter flood damages. Which means all of these were cooked in a tiny RV kitchen while traveling and also since moving into our Tiny House. And all are made from basic pantry supplies. But just maybe they taste so good, because they were...



Cabbage New Potato Onion Skillet, from late January. It was such mild weather in Arizona, we were able to enjoy lighter meals, and this vegetable side dish was delicious and we couldn't wait to enjoy it again. 



Maple Bacon Cornbread. Need I say more? Sweetened with Maple Syrup and flavored with bits of bacon. Long live uncured bacon! From early February. 



Maple Custard. This was a total surprise, it came out perfectly the first time and tastes like a dream! From mid February. 



How to Make a Composed Salad, perfect for salads any time of the year. Yes that is a long name, but I found I became quite creative with getting enough vegetables on our table and salads are as easy as anything else. This process works quite well. From March first. 



Cocoa Dusted Nutty Date Bites. Because sometimes only a sweet treat will do! From the end of March. 



Red Onion Chicken. This was so good! Chicken is a favorite around here, we serve it many different ways. From the end of April.



Skillet Braised Sweet Potatoes and Peas. Unique and quite delicious. From mid May.



Red Cabbage Slaw. Red cabbage deserves a spot in your meal planning, and this is a tasty way to serve it. As written the recipe allows for changes in flavor, so your salad never need be boring. From the end of June.



Beet and Apple Salad with Feta and Walnuts.  Yes another beet salad! They are all so good, but this might be my favorite to date. From early July. 



How to Cook a Meatloaf in your Instant Pot. This was as much as lesson for me, as a recipe. But I have several recipes can be cooked in non-standard ways. Just in case, the stove goes out. Or it is too hot to use the stove! From early August. 



My Love for Laurie Colwin Books. Replacing the books damaged in the flood brought an unexpected surprise. One I loved finding, hidden right in the book. From mid August. 



How to Make No-Boil Yogurt. For me, a good lesson in DIY cooking and being prepared. From early September. 



Stovetop Brussels Sprouts with Parmesan Cheese and Garlic. These were a hit, and we love brussels sprouts even more than before! From early November. 



Chicken Legs and Bacon Sauerkraut. I completely forgot my Mom used to make chicken and sauerkraut for my Dad. But this dish has bacon and is so good! Even the leftovers were good. From early December.
