As the weather gets warmer, and we spend more time enjoying it, we will need nutritious snacks to keep us fed and happy until dinner time rolls around. These Cocoa Dusted Nutty Date Bites are just the ticket.
Easy to make and delicious to eat!
Let's get right to the heart of it, these Cocoa Dusted Nutty Date Bites are not the prettiest to look at, but they sure are delicious! Snacking is a national past time, this is verified by the aisle after aisle of snack foods available in your favorite grocery store, most quick marts and even vending machines found most everywhere. But snacking is can also be necessary. Small children often cannot hold enough food to keep them going to the next meal. If that is the case in your home, whether it is your little or yourself, nutritious snacks are the order of the day.
A perfect recipe to make with little cooks!
The process for making Cocoa Dusted Nutty Date Bites couldn't be any easier. Carefully cut along one side of the date, remove the pit, gently open the date like a book, spread with some nut butter, add additional nut pieces, fold back up to the original date shape, and dust with the cocoa mixture. The cocoa mixture is enough to coat 18 or more Cocoa Dusted Nutty Date Bites. But any leftover cocoa mixture will keep for the next snack attach! Which might come along later in the day, or tomorrow.
This recipe is a fun treat to make with your favorite little by your side. You can do the knife work, and they can do the filling of the open date. But don't think this snack is just for kids, these little bites are just right for anyone wanting to enjoy a tasty and good for you treat. We used peanut butter for this batch, but any nut butter would be delicious. Today was walnuts in our recipe, but use your favorite nut or peanuts. Let's get started, shall we!
Ingredients needed for this recipe:
- Medjool dates
- nut butter
- nuts or peanuts
- cocoa
- sugar
You will also need the following:
- small coffee grinder
- measuring spoons
- kitchen knife
- cutting board
- small container with tight fitting lid
Now we are ready to begin!
Cocoa Dusted Nutty Date Bites
by the seat of my pants!
12-18 Medjool dates
1/4 c peanut butter or preferred nut butter
nut pieces as preferred
1 T dry cocoa
1 T sugar
Combine the cocoa powder and the sugar in the coffee grinder, process until powdery.
Empty the cocoa mixture into a small to medium sized container with a tight fitting lid, so you can "shake" the date bites to coat them with the cocoa mixture.
Cut along one side of the date and remove the pit. Open the date like a book, flat but intact.
Spread with nut butter.
Add nut pieces on top of the nut butter.
Fold back into a date shape. Place in the container, secure the lids, and shake gently.
Remove to a serving dish, and enjoy!
Storage options for Cocoa Dusted Nutty Date Bites. Store at room temperature in a small container with a tight fitting lid for up to 2 days. Place in the refrigerator to store longer.
