Cooking
almost every meal we eat, is my usual kitchen style. Often requiring a bit of
creative license to use what we have on hand in the pantry. When eating dinner,
my husband will turn to me and say, "are you going to blog this?” And that
is how a dinner idea came to be...not really a recipe,
but too good, not to share.
You have probably noticed the mini waffle maker being used to make a main dish keto waffle from canned tuna, grated cheese, and an egg. While I bought a mini waffle maker to take with us on our NPS Volunteer days, recently it went the way of all the other non-stick bakeware. And I now longer have it. But a good idea is still a good idea! Especially for a quick dinner, like Wednesday evening church group.
This is truly a minimalist's recipe.
A can of tuna, a handful of grated cheese and an egg, which is really not a recipe at all! Add in one mixing bowl, and a skillet for frying, and you can have dinner on the table in about 10 minutes. I have enjoyed getting my old fashioned cast iron skillet grill out again, I forgot just how much I used it before our NPS days! For those that wish to use their mini waffle maker, please do, but you are on your own for how long to cook...
Some additional thoughts on this recipe:
These patties would also be great served on a bun, with some chips and coleslaw.
We also made these with some of our homemade canned chicken. Yep, they were good too.
Ingredients needed for this recipe:
- canned tuna
- cheddar or Colby Jack cheese
- egg
- butter for frying
You will also need the following:
- skillet
- mixing bowl
- kitchen fork
- hand grater
- mini waffle maker, if desired
Now we are ready to begin!
Open the tuna, and drain well. I will push the lid down on top of the tuna to squeeze our as much tuna water as possible!
Dump the tuna into the mixing bowl, using a fork, flake the tuna.
Add the grated cheese and the egg. Continue mixing with the fork until well mixed.
Begin heating up the grill pan, add a bit of butter, and let it melt.
Form into four patties, from the tuna mixture. Place on the hot grill pan.
Cook over a medium low flame.
Let cook about three to four minutes until golden brown, gently turn over.
Note: the cheese may stick to the grill, to help you turn the patties without breaking, set the grill aside and as things cool down a bit, the patties will be easier to turn over.
Once turned let the second side cook to a golden brown. Then serve!
For those using a mini waffle maker, cook until golden brown.
I enjoyed my Three Ingredient Tuna and Cheese Patties with a few pickled red onions on top, along with a baked potato and green beans.

Although I am now a vegan/vegetarian, I do remember eating this type of tuna patty as a child. Looks like a great recipe Mylinda.
