Egg Salad, not exactly the most exciting lunch in the neighborhood, or is it? One thing holds true, if you have backyard chickens you will probably have egg salad sandwiches on your table for lunch, from time to time. This is how we do it!
And much like tuna salad I have strong opinions on how it should taste as well as the final texture. For Egg Salad, I like a bit of texture so I dice the eggs instead of grating them. And unlike tuna salad, I do not believe that just about everything goes in Egg Salad. I know, fussy, fussy, fussy! Why? One important reason only, if you don't like it, you won't eat it. And when you eat all your meals at home, you won't have anything to eat if you do not cook food the way you like it. Which is the biggest reason I always offer suggestions in recipes shared here to add, more or less of something in order to make it the way your family will enjoy it the best!
Which is exactly how Two Pickle Egg Salad for Sandwiches came about!
The final texture of this Egg Salad has a bit of a chew with the diced eggs, and now and again you will get a taste of the sweet pickles or the dill pickles. But they do not over power the flavor of the eggs, which should be the star of the show. Same for the mustard, a bit to enhance, but not to over power. If you enjoy more mustard in your Egg Salad sandwich, you can dress the bread you use to make the sandwich, with more mustard. Two Pickle Egg Salad for Sandwiches is in our standing rotation of sandwich makings that we enjoy through the month. True confession, I have never been a big sandwich eater, so sandwiches almost daily, are new for me. Having a generous list of what we rotate throughout the month is enjoyable mandatory! It was time to add Egg Salad to that list...
Fresh eggs are simply a bear to peel!
Fortunately I use my Instant Pot to hard cook eggs, and they peel so easily. And they peel without taking divots of the white clinging to the shell. But before my Instant Pot days I would steam them on the stovetop with the same excellent results! With easy to peel eggs, there is no reason to not to make Egg Salad for sandwiches! Once you have stirred up a batch of Two Pickle Egg Salad for Sandwiches, and have your sandwich ready to enjoy, you may want to top it with grated carrot shreds (yep!) or a handful of salad greens. On the days I am not super hungry, I usually enjoy an open faced sandwich using only one piece of bread...and as always feel free to add or subtract for flavor and make Egg Salad just the way you and yours will enjoy!
Ingredients needed for this recipe:
- eggs
- mayonnaise
- dill pickles
- sweet pickles
- mustard, yellow ball park style
You will also need the following:
- cutting board
- kitchen knife
- medium mixing bowl
- measuring spoons
- measuring cups
- storage container
- Instant Pot / pressure cooker
- stove top saucepan and steamer basket
Now we are ready to begin!
Two Pickle Egg Salad for Sandwiches
by the seat of my pants!
6 - 8 eggs depending upon size
1/4 c small diced dill pickles
1/4 c small diced sweet pickles
2 t mustard
1/4 c mayonnaise
salt and pepper to taste
Peel the eggs and dice into small dice, place in the mixing bowl.
Slice and dice the dill pickles, add to the mixing bowl. Same with the sweet pickles.
Add the mustard and the mayonnaise, stir to combine the ingredients. Taste and season with salt and pepper is desired.
Transfer to a storage container with a tight fitting lid. Cover and store in the refrigerator until needed.
Storage options for Two Pickle Egg Salad for Sandwiches. Store covered in the refrigerator for up to 5 days. I do not recommend freezing this recipe.

DeleteWe like our eggs diced in our egg salad too and I usually add a bit of sweet relish to them along with a bit of mayo and mustard... but not too much.
