Easy to Make Chocolate Mug Cake!

Everything old becomes new again! I have to say, regarding recipes, cooking styles or even kitchen management, no other phrase is more true!  Come and take a look at our Easy to Make Chocolate Mug Cake, the perfect solution for dessert on demand!




I have been flirting with the idea of mug cakes once again, for some time now. 

During our years as Nation Park Service Volunteers, I had even made up a pantry mix to keep on hand for my husband to be able to whip up a quick dessert for himself, as needed. Because trust me the last thing I wanted to do after a day of being on duty in the park, was bake dessert...sorry, but not really reallysorry! Add to that the issue of storage space for a full dessert recipe baked and ready to go. And to be perfectly honest, often a full recipe of anything was too much if my husband was the only one enjoying dessert. Turns out, even dessert leftovers can be boring...or get left behind, to be thrown out. 

Fast forward five years and we have ended NPS volunteering, 

and moved to Texas. But some of the same circumstances are still present here in Texas, just like they were in the park! We are still a small family of two people, and one of us still loves dessert. Every night if possible. And then there is me, who has quietly through the years lost her daily sweet tooth habit! And guess what? Yep, once again a mug cake is front and center in my thinking as a solution to dessert on demand! One that my husband or I could quickly mix and micro bake as needed. But this time, it needed to be a mug cake made from the same ingredients that fill our pantry. 

As luck would have it, one day while visiting Kim's blog, 

she shared a mug cake that she makes when the cravings strike at her house! And the idea came to me to adapt it for using my favorite pantry mix, Whole Wheat Self-Rising Flour. So I did! A little change here, a little microwaving there. And in less than two minutes, my hubby had a fudge cake in a mug. I used a mug large enough, that he could add a small scoop of vanilla ice cream if he wanted to. (and yes, he wanted to!) Easy, delicious and yes, calling for pantry ingredients. The same ingredients I bake and cook with daily. Dessert won't be a problem ever again...




And because we have these little storage bowls, the idea came to me to prep ahead three mug cakes and all my hubby has to do is whisk, bake and enjoy! Some evenings he really does like to DIY a dessert to enjoy.
 
 


Some additional thoughts on this recipe:

What ever you sprinkle on top of the batter, will sink as the cake micro bakes. Essentially creating a topping, so use that to your advantage!

Suggestions for topping the batter, along or in combination as desired:
chocolate chips
nut butter
chopped nuts
dried fruit (dried cherries would be delicious!)
crushed graham crackers
brown sugar
cinnamon

What ever you do, have fun with this list! There is no reason you have to eat the same mug cake each time you micro bake. 
PS, a topping of crushed graham crackers, brown sugar, chocolate chops and chopped walnuts is spectacular...


Ingredients needed for this recipe:
  • Whole Wheat Self-Rising Flour
  • sugar
  • cocoa 
  • oil
  • milk
  • chocolate chips and/or toppings of choice
You will also need the following:
  • large microwave safe mug
  • small whisk
  • measuring cups
  • measuring spoons
Now we are ready to begin!




Easy to Make Chocolate Mug Cake!

1/4 c Whole Wheat Self-Rising Flour, recipe can be found here
1/4 c sugar
2 T cocoa
1 T oil, we used avocado oil
3 T milk
chocolate chips

Combine the dry ingredients, Whole Wheat Self-Rising Flour through cocoa in a large microwave safe coffee mug. 



Whisk together, making sure there are no lumps of cocoa. Add the oil and the milk. Whisk until smooth. Sprinkle the top with chocolate chips. 



Microwave on high for 60 seconds. Open the microwave and check on the mug cake. Microwave until done, for our microwave it was another 30 seconds. Your actual time will be dependent upon your microwave. 



Let cool briefly, and serve warm!
