My gosh February has been a busy month, but not in the kitchen!
When I recently looked back on the month, recipe development took a back seat to many (many!) different projects. From abandoned puppies we needed to find homes for, to Valentine's Day, crazy weather and a shop project that had us taking half of the shed apart for repairs. Oh and then of course we ran into our first, end of winter cold, in about four years...requiring honey and lemon tea. Like I said busy! We still haven't celebrated Valentine's Day because we never go out on that particular day even though it is also our anniversary. We wait until it is quieter, and have a simple supper out in celebration.
Due to the busyness, meals have been nourishing, but not spectacular, if I do say so myself...
With so much outside work being done, inside work, like recipe development has sat down and taken a break. We have been eating a lot of IP dinners of meat and vegetables. And of course my hubby has satisfied his desire for dessert by having ice cream and the occasional mug cake. Except for baking bread for the grandson, the oven has remained in the off position. Boring? It is getting there, I am looking forward to the first of the spring harvests hitting the farmer's markets for a bit of inspiration to come back into my kitchen. That and a bit of a reprieve from the many outside chores calling out so loudly.
But once again it was apples to the rescue! Or should I say we rescued them?
Apples are eaten almost daily in this house. OK, let me start again! We are not that virtuous everyday. We have apples available all the time. Because they are purchased them each time we go to town to stock up on groceries. But there are times, that they do not get chosen when putting a meal together. And then before you know it another two weeks has gone by and it was time to hit up the grocery store again. It is at that point I realize that some of the apples purchased on the grocery trip prior, are needing to be used up.
At times like this, I turn to stewed apples as a quick way to prevent waste.
Having a container of Maple and Cinnamon Stewed Apples or Honey Stewed Apples in the fridge is like money in the bank. They are delicious over oatmeal, with cottage cheese or just on their own! Also perfect as a side dish beside a pork chop. Plus I enjoy having variations of our favorite recipes. You will find around here there is often a honey sweetened as well as a maple syrup sweetened recipe for many of our favorite recipes! So, let's get started.
Ingredients needed for this recipe:
- apples
- maple syrup
- cinnamon
You will also need the following:
- slow cooker
- kitchen knife
- cutting board
- storage container with a lid
Now we are ready to begin!
Maple and Cinnamon Stewed Apple Chunks
2 pounds of organic apples, we used honey crisp
cinnamon to taste
1/3 - 1/2 c real maple syrup
Wash the apples, cut into quarters and remove the core. Cut each quarter lengthwise and then crosswise into bite sized chunks. Drop into the bottom the the slow cooker. You may peel if desired, we do not. Eat a bite of your prepared apples used, if sweet, use the smaller amount, it tart, use the full measure of maple syrup.
Sprinkle with cinnamon to taste. Then drizzle with the maple syrup. Cover and let cook on high about 3 hours. Carefully stir the bottom chunks up to the top, recover with the lid, turn off the slow cooker and let the apples continue to soften and cook completely.
When cooled to room temperature, turn into a serving container, cover and refrigerate.
Storage options for Maple and Cinnamon Stewed Apple Chunks. Store in the refrigerator for up to 5 days. You may freeze Maple and Cinnamon Stewed Apple Chunks for longer storage time, but do expect some change in texture when defrosted.
