Roasted Lemon and Basil Salad Dressing

Roasted Lemon and Basil Salad Dressing is the one to try if you are looking for fresh ideas for salad dressings! Plus it is more delicious than anything you could get at your local grocery store, and you can make it at home...

Since I believe you can never eat enough vegetables, by way of salads and grilled or roasted vegetables, fresh salad dressings are always on my radar! I tend to think the name salad dressing actually limits the use of any delicious concoction you enjoy. Including this Roasted Lemon and Basil Salad Dressing. Somewhere along the way, I began to think of these wonderful creations as "drizzlers". And they can be used in a number of places!

Let's rethink salad dressings!

Maybe we should think of them as a  bright and well-flavored concoction that can be drizzled over grilled vegetables or even steamed chilled vegetables for impromptu salads. And as always, enjoyed on the salad greens of your choice along with a few grape or cherry tomatoes. In my kitchen more than once I have emptied the bottom end of a jar of homemade vinaigrette over some chicken or pork for an instant marinade. 

How does your own kitchen philosophy help you in the kitchen?

That kitchen philosophy is how Roasted Lemon and Basil Salad Dressing was born. Last summer when it was warm and we were grilling in the backyard, on a lark, I asked my husband to grill up some of the lemons, that came in the big bag from Costco. Who would have known that those grilled lemon halves would add a bit of sunshine to or our winter meals too? 


Yes, you did read that right, we grilled lemons. The lemons were cut in half, and the fruity side was put down on the grill to roast to a pucker-y caramelized goodness, then packaged up and put into the freezer. Those grilled lemon halves were enjoyed throughout the winter for salad dressing, marinades, and lemon-based vinaigrettes. 

Grilled lemons in the freezer offer fresh flavor throughout the long days of winter.

Except for the halves used that day for this delicious salad dressing...Those grilled lemons from the freezer were turned into a jar of Roasted Lemon and Basil Salad Dressing each time a ray of sunshine was needed, throughout the winter.  And with summer on the way, again, this is the perfect time to think about buying more lemons to grilling up and tuck a few away in the freezer. Trust me, you won't be sorry! 




Some thoughts on this recipe:

Let the frozen lemons thaw in the refrigerator. You should have no trouble juicing the thawed fruit. 

You may certainly use plain lemon juice for a delicious salad dressing, but do try it with the grilled lemons also. 

The ground flax seeds act as a natural thickener. However you may omit, if desired.


Ingredients needed for this recipe:
  • lemon juice
  • oil 
  • sugar
  • red wine vinegar
  • golden flax seeds
  • Dijon mustard
  • basil leaves
You will also need the following:
  • citrus juicer
  • blender, or
  • stick blender
  • storage/shaker jar
  • liquid measuring cup
  • measuring spoons
Now we are ready to begin!



Roasted Lemon and Basil Salad Dressing
by the seat of my pants!

1/2 c lemon juice, juice from grilled lemons 
1/2 c oil (we prefer Avocado oil, it does not solidify when refrigerated)
1/4 c sugar
1 T red wine vinegar
2 (rounded) T golden flax seeds
1/4 t garlic salt
1 t Dijon mustard
2 t dried basil leaves

Combine the lemon juice, oil, sugar, and flax seeds in a blender. Blend until the seeds have been chopped into small pieces.

Place contents from the blender into a screw-top jar, add remaining ingredients, cover, and shake well.

Storage options for Roasted Lemon and Basil Salad Dressing. Store in the refrigerator for up to 10 days. Let come to room temperature before using.
