What's in Your Crisper Drawer,? Let's talk green onions...

One of the easiest ways to be prepared, is sliced green onions AKA scallions, in your freezer! I keep these around for convenience, flavor and nutrition. Come and take a look at this quick and easy process! Another great way to be prepared in your kitchen and reduce waste.


Green onions were something I used to buy and lose track of, 

in the crisper drawer. But not any more! So many times I would go back to grab the green onions I had brought home from the store a couple of days ago, only to find that not only did I loose track of time, but I also lost track of the green onions too. Instead of green onions there was a bag with what looked like it could have been green onions is a bit of soft green goo in the produce bag. Things are different now! Unless I picked up green onions to be used fresh in a particular recipe that day, they get processed for the freezer. Yes, you read that correctly, for the freezer. 

Why freeze green onions? 

One word, convenience! And quite simply they can be used frozen right out of the freezer for many recipes. Since they thaw almost immediately in a cooked dish right before serving. And don't forget when used as a garnish for a bit of color. So why not process them as soon as they come home, or at least by the next day? That way there is no more lost green onions. It really is a frugal choice for green onions purchased to be used in cooking. Another reason to have green onions prepared and available in your panty is their nutritional profile. While low in calories but full of nutrition (vitamins, minerals and Sulphur compounds) they are another vegetable that offers flavor and nutrition! Come and take a look at how simple this process is. 

Let's make frozen green onions, shall we? 

Like all prepping ahead processes, start with the cleaning of your green onions and move on from there. Trust me, next time, I will buy more green onions to process!



This bag of organic green onions will net about 1 1/2 cups of sliced green onions for the freezer or fresh use, if that is your need when purchasing. 



Clean the green onions by removing any of the green tops that are withered or the portion that might be yellow. I snap any unusable parts off with my thumb nail. Then remove any broken layers of onion along the white part, and cut the root end off. Shake off any excess water. You could use cotton toweling to absorb any excess water from the cleaned green onions, if desired. 



Prepare the storage bags needed for freezer storage. (two sandwich bags and a freezer bag) You can of course put all the slices into one bag, but I do like having these two styles of green onion slices. 



Diagonally slice the bottom part of the green onions, and place the slices in the storage bag. 



Next slice the green tops crosswise and place in the other storage bag. 



Remove excess air from each bag, and seal the top. 



Place both bags in the freezer bag, and freeze! 


Another option: green onions for stir-fry recipes!



Cut the cleaned, and dried green onions into 1 inch pieces. Cut diagonally or straight across, your choice. Place into the labeled bags and freeze!


Here are a few of our favorite recipes calling for green onions! Fresh or frozen green onions are a delicious way to add flavor and a bit of color to just about any dish! 



Mary's Potato Salad.  Fresh green onions are best for this recipe. 




Pork Chops with Scallions.  Grilled scallions/green onions are delicious!




Mark Bittman's Black Bean and Mango Salad. Don't skip the onions in this lovely salad. While I have always used fresh, frozen would also work very well here!



Chinese Spaghetti, not really Chinese and not really spaghetti. Simply delicious and using fresh or frozen green onions, would be fine! 



Quinoa Tabbouleh, different and delicious! I love this unique version. 



Our Favorite Faux Pho! I specifically used frozen for this recipe, and they were perfect. 



Mary's Garbanzo Bean Salad.  Fresh, delicious and so easy to make at the last minute! Fresh green onions are best for this recipe.

  1. Such a great tip! I have never thought of freezing green onions, but I also don't like to throw anything away. Definitely trying this! Thanks for the potato salad recipe too - one of my favourites!

  3. I had sliced and popped our green onions into the freezer this summer when we were getting out CSA boxes and I miss having them on hand. It was great to sprinkle into most any dish!

    1. Nancy it works quite well. Not for every use, of course. Some salads will need fresh, but being so rural, around here, it is all about not wasting food.
