Honestly, change is all we got!
And truth be told, it is not all doom and gloom. Each day we have the previledge to do as we want, and need. Which is most likely a change from yesterday's wants and needs. We also change ourselves. We learn something new. We unlearn something we not longer want to do. And we age...no way around that by the way! Aging happens without our consent, in the same ways that our children aged without our permission. Speaking for myself I was not quite ready for the baby to grow into first a toddler and then in the blink of an eye, a teen!
How we eat will also change.
Or more importantly how we need to eat, will change. Currently I eat less volume but in all honesty my nutritional needs are more. Which has sent me on a course of improving the recipes I cook. While I have always been a good cook, and used healthy food supplies. The supplies have in fact changed through the years, along with my needs for nutrient dense food. We are now an organic whole grain kitchen, and an organic kitchen for all fruits and vegetables as often as is possible. Trendy? Not from my standpoint, you can pay the farmer or pay the pharmacy. I know who I choose...
Here recently I have taken on the challenge of better breakfast options.
And along the way I also found I needed more protein and fiber to start my day. I will be honest with you, I am not a big "eggs for breakfast" kind of eater. I actually need whole grain carbs to keep me going along with a little more protein. Which sent me to the kitchen to develop what I call Powered Up Oatmeal. The original recipe was cooked and enjoyed for a few weeks until I was once again tired of eating the same breakfast each day. Which led me to begin developing Powered Up Granola. Why? Well granola can take on any flavor personality you want. So you never (can we say that again?), never have to have the same breakfast everyday. Because change should always bring along a bit of variety!

Like the other Powered Up granola recipes you will need to do the two step baking to ensure that the egg is cooked and dried along with the oats for long term shelf stable storage.
Cinnamon would be a lovely flavor addition when you make this from time to time! Maple and cinnamon are a great flavor pairing.
Ingredients needed for this recipe:
- organic oatmeal
- organic oat bran
- organic wheat bran
- eggs
- large/wide style coconut shreds
- pumpkin seeds
- salt
- vanilla
- coconut oil
- real maple syrup
You will also need the following:
- medium mixing bowl
- silicone spatula
- measuring cups
- measuring spoons
- 9X13 baking pan
- storage container with a tight fitting lid
Now we are ready to begin!
Powered Up Double Coconut Maple Granola
by the seat of my pants
350-degree oven
2 c old fashioned oatmeal
1/3 c oat bran
2 T wheat bran
1/8 t salt
2 eggs
1 1/2 c coconut, wide style shreds
1/2 pumpkin seeds
1 t vanilla
1/3 c coconut oil, melted and cooled
3/4 c real maple syrup
In the medium sized mixing bow, add the oatmeal, oat bran, wheat bran and the salt. Stir well to mix.
Add the two eggs and mix together well. You want the dry ingredients mixed with the eggs evenly. This may take a few minutes. Once mixed, add the pumpkin seeds and the coconut shreds. Mix well.
Add the coconut oil, vanilla and the maple syrup. Mix well. Turn into the 9X13 pan and bake for 20 minutes. Bake 15 minutes more, and stir. Reduce oven temperature to 300-degrees and bake for 15 minutes. Stir well and bake the final 15 minutes. Remove from the oven, stir once again.
Let cool, and package for storage in a storage container with a tight fitting lid or a freezer bag.
Storage options for Powered Up Double Coconut Maple Granola. Store at room temperature for up to 8 weeks. You may store in the freezer for a longer storage time.
