Chicken and Barley Skillet Meal, a dinner idea!

Cooking almost every meal we eat, is my usual kitchen style. Often requiring a bit of creative license to use what we have on hand in the pantry. When eating dinner, my husband will often turn to me and say, "are you going to blog this?” That is how a dinner idea came to be...not always a recipe, but too good, not to share.

Today we have Chicken and Barley Skillet Dinner

When we keep making the same thing for dinner, 

without a doubt, it becomes it's own recipe. And always we keep making it, because it tastes good. At that point, there is only one real way to view the end result. And that is to admit, you have a new recipe. Maybe even a recipe that is now ready to be shared...because all the tweaks are done!  

I have made this several times. And it always tasted good, 

but something was missing. Having cooked and packaged barley in the freezer, made it easy to turn to this particular combination, and serve it for dinner. But last night's dinner was different. Why? Previously I made it with pork chops. But last night I had a couple of chicken thighs out for dinner. So I made it again, and with total taste and texture success! The chicken, golden onions, and green beans are so good with the barley! Come and take a look at Chicken and Barley Skillet Meal, a dinner idea...


Some additional thoughts on this recipe:

You may certainly double to serve more people. Or add more chicken pieces for those that want or need more protein. 

Thyme and onions are a wonderful flavor pairing. 

This recipe like many for delicious food, does not photo well, but tastes delicious. 

Having cooked barley in the freezer makes this skillet meal a 30 minute dinner, more or less. 


Ingredients needed for this recipe:
  • chicken thighs
  • onion
  • green beans
  • cooked barley
  • garlic salt
  • thyme leaves
You will also need the following:
  • Large skillet, with lid
  • cutting board
  • kitchen knife
Now we are ready to begin!




Chicken and Barley Skillet Meal
by the seat of my pants!

2 chicken thighs, we used skinless with bone in
2 c frozen green beans
1 c cooked barley, our process here
1 onion
2 T butter
garlic salt to taste, our recipe here
dried thyme leaves
salt and pepper to taste




Peel and dice the onion, set aside. 

Add the butter to the skillet, melt over medium high heat. Add the diced onions and sprinkle with the garlic salt. Immediately turn the burner down to medium. Stir as the onions fry in the butter and turn a light golden brown. 




Push the onions to the side of the pan and lay the chicken pieces down in the center of the pan. Season with salt and pepper along and thyme leaves. Fry until golden brown, and turn over. 



Cover and cook for 10 minutes. 

Remove the lid and add the green beans. Cover and cook additional 10 minutes. 




Yes, I did change lids!

Remove the lid, pushing the chicken and green beans to the edge of the pan. Stir the barley into the onion mixture in the center of the pan, adding a bit of water if needed. 




Gently combine the barley and green onions, recover with the lid and continue to cook for 5 minutes over low heat, to allow the ingredients to marry together and heat the barley. 

Serve!
