Laurie's Super Easy Corn Casserole

Laurie's Super Easy Corn Casserole is one of those recipes you will find yourself making often! Why? Because it is that good, that frugal, and that easy...which will make Laurie very happy!


I like Laurie's recipe for a variety of reasons. 

1) it can be made on the spur of the moment, from a well-stocked pantry. 
2) it is tasty! 
3) it is frugal. 
4) and it is fun to make with kids! 
5) plus, it is perfect to share at a potluck gathering. Everyone seems to love it!

There really aren't many steps to this recipe, but crumbling the soda crackers is especially fun for little ones to help the cook. And don't we all need more easy and delicious recipes, made quickly from pantry ingredients, in our lives? 

Number five on the list is where I first enjoyed Laurie's Super Easy Corn Casserole. During my working years I would help my Senior Residents put together a potluck each month. This jewel came from the kitchen of one of my residents. On that particular day my husband had joined us for the potluck. He fell hard for this down home corn casserole and I asked Laurie for her recipe. 

Simply called Corn Casserole...

She said she had made it hundreds of times through the years and she simply called it Corn Casserole. She said she had 50 recipes from the 50's that she made on a regular bases. I told her I would love to have a few more like this one! I have made it many times since that first taste about eight years ago. My guess is, you probably have a corn lover in your family that would also enjoy this casserole. I do hope you give Laurie's Super Easy Corn Casserole a try because Laurie would be so proud!

Modern day commercially canned food is a bit different...

I know this recipe was created many years ago, and due to changes in the commercial canning of vegetables, here recently I have made a couple of observations in the canned products available at the market. For instance creamed corn is not as thick as in previous years, and there seems to be more water and less cut corn in a can of corn. These changes are reflected below in a slight alteration from Laurie's original recipe. You can tell by the photos offered in this post, we have even make this when traveling for the winter months following the sun...when made at home for a shared dinner I will use a glass casserole dish. 


Some additional thoughts on this recipe:

Use the style of cracker you have on hand or prefer. 

You could also use dry bread crumbs, about 1/3 cup full.

Don't skip the butter on top...


Ingredients needed for this recipe:
  • canned corn
  • canned cream corn
  • egg
  • soda crackers
  • salt & pepper
  • butter
You will also need:
  • medium mixing bowl
  • kitchen spoon  
  • baking pan or pie tin

Laurie's Super Easy Corn Casserole

350-degree oven

1 16 oz. can whole kernel corn - drain and reserve the liquid
1 16 oz. can creamed corn
1 egg
8 soda crackers or "Ritz" style round crackers
butter, to dot the top!
salt and pepper to taste if desired

In a large bowl, beat the egg, add salt and pepper if desired. Stir in the creamed corn, the drained corn and 1/4 c of the reserved liquid.  

Crumble the crackers over the top, stir in to moisten.

Butter a 9-inch square glass pan or pie tin, turn the corn mixture into the pan. 
Do not cover. 


Laurie's Super Easy Corn Casserole.

Dot the top of the casserole with the butter.

Bake 45-50 minutes or until the top is golden brown, crusty and a knife inserted into the center comes out clean.

Storage options for Laurie's Super Easy Corn Casserole. Store covered in the refrigerator for up to three days. I do not recommend freezing the recipe.

  1. Hmmm, sounds good. I don't have any soda crackers (never do), but I have Ritz crackers. Wonder if they'd be an okay substitute?

  4. Hello! This sounds like a great recipe but we don't have creamed corn or soda crackers here... anything I can sub / make to use instead? Thanks for sharing at Fiesta Friday.

    1. Commercially canned creamed corn is just corn in a light white sauce, you could make your own. You could sub in dry bread crumbs for the soda crackers. It would be slightly different, but still quite good. Thanks for stopping by!

  8. As another Laurie, I had to check this out! It's been fun to use up food we've had on hand to save on trips to the store. I don't like creamed corn, so we don't have any on hand, but I do like cheesy Mexican corn casserole! That's something I might make to go with all the leftover ham we'll be having this week!
