One of the blogs I follow is What's Cookin' Italian Style Cuisine. Claudia cooks and writes about all of her family's favorites, the same ones served at her mothers' table and the table of her grandmother. So if you have spent any time around us here, at Scratch Made Food! & DIY Homemade Household, then you know those kind of recipes, are also my favorite kind of recipe!
When I read about this potato recipe instantly I knew I wanted to make it. "Let's eat more vegetables" has been my mantra for years. Plus, to be perfectly honest I have never met a potato dish I did not like! I was also intrigued by the addition of olive oil in place of the standard butter and milk combo. As far as the Parmesan cheese is concerned, what does not taste better with a bit of Parm, over the top? Last night we had Rustic Olive Oil and Parmesan Mashed Potatoes with some leftover meatloaf. Because it also holds true, when trying a new recipe, it is all about that recipe, and we just might eat it with whatever else we might have on hand.
What did we think about this recipe? Well...
This flavor of this dish is actually delicate, the flavors of olive oil and Parmesan, are not overpowering, in any way. Instead they are deliciously sublime. Rustic Olive Oil and Parmesan Mashed Potatoes will go with just about any main dish you wish to serve them with, ore even as a second side dish offering. But I am thinking they are the perfect side dish to serve with fish. Fish? Yes, in reality fish also has a delicate flavor. This dish of potatoes will compliment and not take away from any main dish you wish to serve them with. However these potatoes might actually help me to eat more fish! Something that is on my nutritional list to accomplish.
Some additional thoughts on this recipe:
Like every other home cooking recipe, you may adjust any of the ingredients you listed. Don't like garlic? Leave it out. Want more garlic? Add it!
Don't be afraid to use enough olive oil to have fluffy potatoes. Due to the moisture from the carrots, it is not as much as one might think.
Top dress with Parmesan, salt and freshly ground pepper before serving.
You are not required to top dress the dish before serving, but I hope you do, that first bite into the Parmesan cheese is delightful!
Don't be concerned if this recipe seems to make too much for your family, I guarantee. the leftovers are delicious!

Ingredients needed for this recipe:
- potatoes
- carrots
- garlic seasoning
- olive oil
- Parmesan Cheese
- Salt & Freshly Ground Pepper
You will also need the following:
- vegetable peeler
- kitchen knife
- cutting board
- measuring cups
- measuring spoons
- medium saucepan with lid
- potato masher
- silicone spatula
- serving bowl
Now we are ready to begin!
Rustic Olive Oil and Parmesan Mashed Potatoes.

4 medium potatoes
3 medium sized carrots
1 t garlic seasoning blend, use your favorite!
3 - 4 T olive oil
1/3 - 1/2 c Parmesan Cheese
salt and fresh ground pepper to taste
Peel the carrots, trim the ends, slice into 1/2 inch slices and set aside.
Peel the potatoes, cut into quarters lengthwise and then cutting each piece crosswise into four pieces. You may of course scrub the potatoes well and leave the skin on, for an even more rustic dish.
Cover and bring to a boil, reduce heat to simmer and cook until the carrots and potatoes are tender, about 20 minutes.
Pile the potatoes into a serving dish, top dress with a drizzle of olive oil, a big shake of Parmesan Cheese and salt and fresh ground pepper to taste.
Storage options for Rustic Olive Oil and Parmesan Mashed Potatoes. Store covered in the refrigerator for up to four days.

Place the carrot slices into the bottom of the saucepan, add the potato pieces. Cover with cold water, and sprinkle the garlic seasoning over the top. You may also add 1/4 t salt and fresh ground pepper is you wish. Remember, most of the salt will be drained away...
Cover and bring to a boil, reduce heat to simmer and cook until the carrots and potatoes are tender, about 20 minutes.
When the potatoes and carrots are tender, drain well. Use the potato masher to mash the potatoes and carrots together, leaving behind plenty of lumps! Remember, this is a rustic dish...
Add the olive oil and the Parmesan Cheese, fold into the mashed potatoes with a silicone spatula. Do not overmix...
Pile the potatoes into a serving dish, top dress with a drizzle of olive oil, a big shake of Parmesan Cheese and salt and fresh ground pepper to taste.
Storage options for Rustic Olive Oil and Parmesan Mashed Potatoes. Store covered in the refrigerator for up to four days.
