Rustic Olive Oil and Parmesan Mashed Potatoes.

Looking for a new way to enjoy mashed potatoes? Well then, look no further. Rustic Olive Oil and Parmesan Mashed Potatoes is the one to try, a true family favorite...come and take a look!
 

One thing that creative cooks and food blogger have in common is that they follow food bloggers! 

One of the blogs I follow is What's Cookin' Italian Style Cuisine. Claudia cooks and writes about all her family favorites, the same ones served at her mothers' table and the table of her grandmother. If you have spent any time around us here at Scratch Made Food! & DIY Homemade Household, then you know those recipes, are my favorite kind!

When I read about this recipe I knew I wanted to try it. "Let's eat more vegetables" has been my mantra for years. Plus, to be perfectly honest I have never met a potato dish I did not like. I was also intrigued by the addition of olive oil in place of butter and milk. As far as the Parmesan cheese is concerned, what does not taste better with a bit of Parm on top? Last night we had Rustic Olive Oil and Parmesan Mashed Potatoes with some leftover meatloaf. What did we think about this recipe? Well...

We will definitely be eating these delicious mashed potatoes again! 

This flavor of this dish is actually delicate, the flavors of olive oil and Parmesan, are not overpowering, instead they are quite sublime. Rustic Olive Oil and Parmesan Mashed Potatoes will go with just about any main dish you wish to serve them with, and I am thinking they are the perfect side dish to serve with fish. Which might actually help me to eat more fish! 

Some additional thoughts on this recipe:

Like every other home cooking recipe, you may adjust any of the ingredients you wish. Don't like garlic? Leave it out. Want more garlic, add more!

Don't be afraid to use enough olive oil to have fluffy potatoes. Due to the carrots, it is not as much as one might think. 

You are not required to top dress the dish before serving, but I hope you do, that first bite into the Parmesan cheese is delightful!

Don't be concerned if this recipe seems to make too much for your family, I guarantee the leftovers are delicious! 

Actually, they are so good, this just might be the perfect make ahead dish! Top dress with Parmesan, salt and freshly ground pepper before serving. 


Ingredients needed for this recipe:
  • potatoes
  • carrots
  • garlic seasoning 
  • olive oil
  • Parmesan Cheese
  • Salt & Freshly Ground Pepper
You will also need the following:
  • vegetable peeler
  • kitchen knife
  • cutting board
  • measuring cups
  • measuring spoons
  • medium saucepan with lid
  • potato masher
  • silicone spatula
  • serving bowl
Now we are ready to begin!



Rustic Olive Oil and Parmesan Mashed Potatoes.

4 medium potatoes
3 medium sized carrots
1 t garlic seasoning blend, use your favorite!
3 - 4 T olive oil
1/3 - 1/2 c Parmesan Cheese
salt and fresh ground pepper to taste



Peel the carrots, trim the ends, slice into 1/2 inch slices and set aside. 

Peel the potatoes, cut into quarters lengthwise and then cutting each piece crosswise into four pieces.



Place the carrot slices into the bottom of the saucepan, add the potato pieces. Cover with cold water, and sprinkle the garlic seasoning over the top. You may also add 1/4 t salt and fresh ground pepper is you wish. Remember, most of the salt will be drained away...

Cover and bring to a boil, reduce heat to simmer and cook until the carrots and potatoes are tender, about 20 minutes. 



When the potatoes and carrots are tender, drain well. Use the potato masher to mash the potatoes and carrots together, leaving behind plenty of lumps! Remember, this is a rustic dish...



Add the olive oil and the Parmesan Cheese, fold into the mashed potatoes with a silicone spatula. Do not overmix...



Pile the potatoes into a serving dish, top dress with a drizzle of olive oil, a big shake of Parmesan Cheese and salt and fresh ground pepper to taste. 

Storage options for Rustic Olive Oil and Parmesan Mashed Potatoes. Store covered in the refrigerator for up to four days.
