Yes, this makes a lot! You can easily serve eight hungry people and have leftovers. The other good news is, Pasta Fagioli freezes well and is the perfect meal to have on standby in the freezer. So even if your family is on the smaller side, this is the recipe to make up and freeze. Because there is nothing better than pulling dinner (already made!) from the freezer...
Add carrots, celery, tomato sauce, diced tomatoes, and beef stock. Bring to a boil, add the basil, oregano, and drained beans. Reduce heat to simmer, cook for 1 1/2 - 2 hours. Taste, adjust flavor for salt and pepper to taste.
The preparation is simple, dice some veggies, sauté for a moment, then add the beef. Cook until the beef is browned, add the rest of the ingredients, and simmer. Soon you will have Pasta Fagioli on its way to feeding your family and anyone lucky enough to be asked to dinner. Add some crusty bread, maybe a veggie plate and dessert. If you're also celebrating, a nice red wine will be delightful.
The cooking time allows for relaxation, visiting or getting chores done!
While it simmers you get to relax or if you have friends and family coming over. This is the time for a great visit, because a good catch up is always in order! Of course, if you, like so many others, have a list of things to be done, this hands-off recipe is the one to make! Getting a pot of Pasta Fagioli on the stove simmering can be the perfect time to get caught with those chores that greet you when you walk in the door. Then before you know it, dinner is done, and so are the chores! Either way, I hope you make this soup, because it is delicious...Some additional thoughts on this recipe:
Pasta Fagioli is the perfect dish to adapt to what you have on hand. I cannot think of a single vegetable that would not be delicious in this soup.
If you have some zucchini, dice it and add it when the soup is almost done.
How about some green beans, cut in one inch pieces or a few peas.

2 15 oz. can Cannellini Beans, drained OR 3 c cooked white beans
