Savory Cheese and Onion Whole Wheat Bread

From time to time we all a loaf of bread that is just a bit different than the usual bread eaten daily. In our house this is one of the specialty loaves we look forward to enjoying. And I think you will enjoy, Savory Cheese and Onion Whole Wheat Bread as much as we do. 


This savory loaf is delicious and, just as easy to make!

Now that I have a workable process in place for a single loaf of bread, the fun begins to be creative with flavor and added nutrition from seeds, nuts and cheese. This recipe uses the same process as offered for A Single Loaf of Whole Wheat Bread. Set the whole wheat flour to soak overnight in water and a kiss of apple cider vinegar. Then you finish it up the nest day. But for this tasty loaf, I like to cut the cheese into cubes and let them dry out in a cool dry spot, like my pantry. That way you get actual cubes of cheese baked in the bread...

Whole wheat bread is our bread of choice.

In our house whole wheat bread is the cornerstone of meal planning. And while we do not eat bread at every meal, everyday, it is our custom to have a loaf of whole wheat bread available for toast at breakfast or a sandwich at lunch. Sometimes we will have a slice of bread and butter with a salad or bowl of soup at dinner time. We do tend to go through a loaf of bread every five or six days. Which is one of the reasons I developed a four loaf recipe for Our Daily Bread.

And as delicious as our regular bread is, sometimes you need a loaf of another flavor! And this recipe for Savory Cheese and Onion Whole Wheat Bread checks all the boxes, it is easy, delicious and is just as good made into toast as it is a sandwich. Come and take a look...


Some additional thoughts on this recipe:

Who doesn't love garlic cheese bread? Try substituting garlic salt for part of the salt called for in this recipe. 

If you are out of the seeds called for in the recipe, feel free to substitute an equal portion of different seeds or chopped nuts. 

If you are not a fan of sharp cheddar, medium cheddar is just as good. But I just might use 1 1/2 cups...

Ingredients needed for this recipe:
  • whole wheat flour
  • apple cider vinegar
  • honey
  • oil
  • yeast
  • salt
  • hemp hearts
  • flax seeds
  • chia seeds
  • dried onion pieces
  • wheat gluten flour
  • oats
  • sharp cheddar cheese
  • oat bran or additional whole wheat flour
You will also need the following:
  • medium sized mixing bowl
  • measuring cups
  • measuring spoons
  • kitchen knife
  • cutting board
  • Automatic Bread Machine
  • loaf pan
Now we are ready to begin!


Savory Cheese and Onion Whole Wheat Bread.

Savory Cheese and Onion Whole Grain Bread

by the seat of my pants!
350-degree oven, for final baking

The day before:
1 c water
1 t apple cider vinegar
3-4 c whole wheat flour

In the medium sized mixing bowl, combine the water and apple cider vinegar with enough whole wheat flour to make a wet dough. Just remember to mix in enough whole wheat flour to have a dough consistency, not a batter. Cover and set aside overnight. 

If you wish, you may cut enough sharp cheddar cheese, cover a plate with a paper towel, scatter the cheese over the paper towel and cover with another paper towel. Place the diced cheese in a cool dry spot to dry. 

When you are ready to bake:
2 T water
2 T honey
2 t yeast, I use instant yeast
2 T oil

1 T chia
1 T flax
I T dried onion pieces
1/4 c hemp hearts
soaked whole wheat dough, from the day before
1/4 c gluten flour
1/3 c oats
1 t salt 

Add all the ingredients in the order listed to the mixing pan in the bread machine. Select the dough cycle and process. When the machine beeps, you are ready for the final shaping and rise.

Shape by hand, and the final rise:

completed dough
1 c diced sharp cheddar
oat bran or a small amount of additional whole wheat flour


Sprinkle the work surface with oat bran, add the completed dough, flatten and scatter the cheese over the top. Knead lightly using only as much oat bran as needed to keep the dough from sticking to the work surface. When cheese is evenly mixed in, shape into a loaf and place in a prepared loaf pan.


Let rise in a warm protected space, the oven with the oven light on is perfect!



When doubled, remove the dough, preheat the oven, then bake 30-40 minutes or until done in your oven.


Let sit in the pan for five minutes, then turn out to cool completely.



Storage options for Savory Cheese and Onion Whole Wheat Bread. Store in a plastic freezer bag at room temperature for up to 5 days. You may freeze Savory Cheese and Onion Whole Wheat Bread for longer storage.
