Whole Wheat Carrot Chia Bread, is so easy even your favorite little kitchen helper, can have a helping hand in the making! Start this delicious loaf in the ABM, and finish in the oven, if desired!
Having whole wheat bread in our cupboard means we always eat well.
With the updated recipe for our four loaf batch of daily bread, pretty much always available in our kitchen we still like to mix it up a bit with a single loaf of specialty bread. For these single loaves, I do use my bread machine. To be honest, it is the perfect kitchen helper for mixing and rising the dough. After the second rise, you may certainly let the dough go on to be baked right in the machine. But to be honest, I prefer the flavor of a longer risen dough, so I finish out the baking just a little bit differently...
My bread machine, could also be call a dough machine...
I remove the dough, deflate it, and shape it into a standard loaf. It is then tucked into a prepared bread pan and allowed to rise for a third time at room temperature. Once ready to bake, I go "old school" and use my oven for baking the bread. It is important to keep in mind that, Whole Wheat Carrot Chia Bread will still be a very tasty loaf when made completely in your ABM. Plus the dough can not be easier to complete, just load the ingredients and press go!

I have been baking single loaves of whole wheat and honey bread using the ABM for the kneading and protected rising, for years. And it has become my choice for a perfect single loaf of bread. But I do have to confess that when automatic bread machines first came out decades ago, I was a young-ish bride who baked her own bread and I took an immediate dislike to them believing that they were frivolous. After all, wasn't I already baking bread for my family?
How I came to have a bread machine...
Yes, I know it is not good practice to dislike that which you know nothing about...and fortunately one day while reading my favorite baker's catalog I came across an article. about automatic bread machines. The title was "Why You Need a Bread Machine in Your Kitchen!" And I wondered if I should take a look and get a better understanding of this new kitchen wonder...Needless to say, I was quickly educated about the use of these machines.
If you don't have a bread machine, this might help you decide that you really need to get one!
Turns out, it is your best friend in the kitchen for kneading and rising all your favorite yeast dough recipes. From there, simply finish out the dough as needed. Pizza? Deflate, add toppings, and bake. Cinnamon Bread, deflate, butter the dough, add some cinnamon and sugar, then roll, shape, rise, and bake. I think you get the idea. In addition, the article went on to say that the third rise would allow the dough to age a bit longer and the flavor would be enhanced. And after about 30 years of doing this, I can say it is all true. Let's get baking!
But first...
This recipe is part of a
series of single loaf recipes for variety bread baking:
- whole wheat flour
- gluten flour
- honey
- yeast
- butter
- chia seeds
- large carrot
- salt
You will also need the following:
- Automatic Bread Machine
- hand grater
- measuring cups
- measuring spoons
Now we are ready to get started!

Whole Wheat Carrot Chia Bread

350-degree oven for bakingUPDATED: 01.30.2024
1 large carrot, peeled if desired, then grated
1/2 warm water
2 t instant yeast
1 1/2 T butter
2 T honey
1 rounded T chia seed
2 c whole wheat flour
2 T vital wheat gluten
1 t salt
Wash the carrot, peel if desired, then grate using a standard grater. Add the grated carrot along with the remaining ingredients (in the order listed) to the mixing pan in the Automatic Bread Machine.
Press and use the dough cycle, to process.
After the second rise, remove the dough from the bread machine.
Deflate and shape into a loaf, and place in a prepared bread pan. Let rise in a warm place for 45-60 minutes or until doubled in size.
Tip, your oven with the light on is a great dough rising spot!
Bake for 35-40 minutes or until done in your oven. Baked bread should test at 190 degrees to be fully baked.
Let cool briefly in the pan, and turn out to cool completely. Once cool, store in a covered bread box, or heavy-duty freezer bag to keep fresh.
Storage options for Whole Wheat Carrot Chia Bread. Store at room temperature for up to four days, freeze for longer storage times.

ReplyDeleteSalt in bread is largely for flavor, leaving it out will not affect the rising of the dough. So it should be just fine.
