Simple 3 Ingredient Beet Salad, easy and delicious!

Simple 3 Ingredient Beet Salad is delicious! It is also quick to put together, is small-batch sized for smaller families, and goes great with just about everything! Beets are available now, so what are you waiting for? Try Simple 3 Ingredient Beet Salad with different colored beets, because they are all good for you! 



Vintage recipes are not only fun to explore but still offer good food for today. 

As I continue to explore vintage recipes as well as many of the old ways that were common decades ago, one thing has become very clear. Many of the foods served, were grown at home, cooked at home, and eaten at home. All three of which are still of great value to your budget, and good for the whole family. A shared meal is one of the easiest ways to stay connected in our busy times. 

But in addition to this, I have also observed that most of the recipes that were family favorites handed down and looked forward to being enjoyed often, were usually simply prepared. It only makes sense as it does take a lot of time to grow, care for and preserve food from the garden and family orchard. With time already invested in growing food, simple preparation methods were developed, used, and enjoyed. The woman of the house always had her family's best interests at heart, but time management was also a priority. 



Being busy often helps us streamline our prep time in the kitchen.

Due to time constraints, those simple preparation methods and recipes came to be. Meals were served, enjoyed and all were nourished. Today many of us do not grow our own food, but time still tends to be in short supply. Each day is new, but each day only holds the same 24 hours to get it all done. Which is one reason I have begun to go back and relearn some cooking lessons, from those cooks using the older ways

Most simply prepared foods that showed up on repeat were the result of matching compatible flavors. But more importantly using quality ingredients. If you have a bottle of brightly flavored vinegar, a fresh beet or two, and a bit of salty creamy Feta, together these flavor elements will come together to make a fine salad, like this one, for Simple 3 Ingredient Beet Salad

Not every recipe needs to be time-consuming. 

Even Julia Child was a proponent of quality ingredients, cooked simply and offered with just the right seasonings. I hope you give this one a try...I find it easiest to cook up a few beets in the Instant Pot. It is quick, plus basically a hands off method and they keep well in the refrigerator for quick recipes like this one. As well as an impromptu jar of pickled beets
 

Ingredients needed for this recipe:
  • beets
  • balsamic vinegar
  • Feta Cheese
You will also need the following:
  • Instant Pot or Medium-sized pan with lid
  • cutting board
  • small serving bowl
  • small kitchen knife
Now we are ready to begin!

Simple 3 Ingredient Beet Salad

1 large or 2 or 3 medium beets, cooked peeled and diced 
2 T Balsamic vinegar - or any light naturally sweet vinegar
3 to 4 T crumbled Feta

Cook the beets using your preferred method. Let cool, then peel and dice. 

Place the diced beets into a small bowl, drizzle with Balsamic vinegar, toss lightly, and sprinkle with the Feta cheese, and that is it! Need more servings for your family? Grab a larger bowl, and double the ingredients. 

Storage options for Simple 3 Ingredient Beet Salad. This salad may be kept in the refrigerator tightly covered for up to three days. I do not recommend freezing this dish.

  2. i have to admit i buy beetroots cooked already, and sealed in a vacuum pack. soooo much easier than cooking them myself:-) They are delish with fetta, aren't they?
