Any time I can find a package of organic cream cheese in my local market, I grab one!
True confession I have loved cream cheese since I was about nine years old. I remember once when I went grocery shopping with my mom, she told us if we behaved, we could each pick a treat to put into the shopping cart. And I chose a 3 ounce package of cream cheese...and I just ate it, like it was a slice of cheddar. It was rich, creamy and just a tad bit salty. And yes I loved it! I also remember my mom saying "you picked that?" Yes mom, I did. And I have loved it since that day.
I have a few cheesecake recipes I make for my husband and years ago,
for my Sunday dinners with family. And of course there is that retro appetizer using a standard 8 ounce block of cream cheese, covered in cocktail sauce and heaped with tiny chilled shrimp, that we have enjoyed in years past. Plus my beloved black olive, chopped walnuts and cream cheese mixture I use to stuff celery or just eat it off the spoon! Soon I hope to make that magical Woolworth Lunch Counter Cheesecake. It was my favorite when ever I was shopping on my own as a teen. And now these Easy Cheesecake Pudding Parfaits!
I was searching for a quick, easy to make dessert that could also be modified for low histamine restrictions.
And while I have not (nor will I) made a big deal about eating foods that are low histamine, my gosh I sure missed having dessert from time to time! And I knew it would not just be me missing a creamy dessert. This recipe makes four lovely desserts to share or keep just for yourself. In this household I shared because those cheesecakes I mentioned in the second paragraph? I make those primarily for my husband, you see after chocolate, he loves cheesecake best. Me? Turns out I am not the biggest baked cheesecake fan. I have always been partial to that no bake cheesecake, and these parfaits are quick and easier to do!
Additional thoughts on this recipe:
The granola will be more crunchy than the graham cracker crumbs. For those that wish to use granola but want a softer crunch, layer the crumbs between the spoonsful of cheesecake pudding.
You can also make in the morning and serve in the evening, the granola will still be a soft crunch.
And lastly this recipe does offer how easy it is to modify everyday foods for a low histamine family member.
For fun use different dessert dishes or even small drinking glasses.
Ingredients needed for this recipe:
- cream cheese
- sugar
- half and half
- vanilla
- lemon juice
- graham cracker crumbs
OR
- granola of choice with no added dry fruit
- juice pack peaches
- raspberry jam
You will also need the following:
- food processor (for the granola option)
- mixer
- measuring spoons
- measuring cups
- silicone spatula
- mixing bowl
- kitchen spoon
- dessert bowls or parfait glasses
Now we are ready to begin!
Easy Cheesecake Pudding Parfaits
by the seat of my pants!
8 oz. organic cream cheese
4 T sugar
1 t vanilla
1 t lemon juice
4 T half and half
3/4 c granola - with no added dry fruit
OR
3/4 c graham cracker crumbs
juice packed peaches
raspberry jam
If using granola, you will need to whirl the granola in the food processor until it is the consistency of graham cracker crumbs. Set aside until needed.
Place the following ingredients cream cheese, sugar, vanilla and lemon juice into the medium sized mixing bowl. Beat until the mixture is combined well and there are no large chunks of the cream cheese in the mixture.
Add 2 T of the half and half and beat again.
Add the last 2 T of the half and half and beat until creamy and smooth.
Place a spoonful of granola or graham cracker crumbs in the bottom of the dessert dish, saving some for the top garnish.
Add the cheesecake pudding mixture evenly. Top with the remaining crumbs, then some peach slices and a spoonful of raspberry jam. Chill until serving time.
Storage options for Easy Cheesecake Pudding Parfaits. Store in the refrigerator for up to three days. I do not recommend freezing this recipe!
