Winner Winner Chicken Dinner! 12 Frugal Favorites Made with Chicken Thighs. Vol I

Everyone needs a few frugal favorites! For the busy days, or any day to help keep the budget in shape...while also feeding family and friends a delicious dinner!



Because we all make dinner, Winner Winner Chicken Dinner! 12 Frugal Favorites Made with Chicken Thighs was put together just for you! I think you just might find one or two new favorites here...with Vol I complete, it is time for more creative research and development!

Winner Winner Chicken Dinner Vol 1.

Chicken Bacon and Cabbage Skillet. This one pan dinner is a favorite around here, the trio of flavors compliment one another and everyone loves it. I hope you give this one a try!

Pickle Chicken. We use a number of things to marinade chicken around here, and this simple pickle brine marinade is a favorite! While this is not the prettiest of dishes, it will be one of the best tasting. P.S. this makes a delicious chicken "burger".

Curry Maple Dijon Chicken Thighs. We have become fans of curry, but I must admit, our curry use is still on the light side! If you are a long-time curry lover, feel free to double the curry measure. This dinner goes perfect with rice and a side of broccoli.

Chicken Dinner number 2, Three Ingredient Pineapple Thai Chicken. This delightful dish came from a very frugal moment! Originally made with crushed pineapple left from making a carrot cake. We loved it so much that the next time I made it I only had pineapple rings in the pantry. It is delicious either way, but the rings make it pretty enough for company...For any special occasions serve this dish with Cilantro Brown Rice and Red Potato, simply wonderful together.

Chicken Dinner number 3, Sweet Lime and Curry Chicken Thighs. Another light curry dish, this time paired with lime juice and a touch of sugar. Serve with baked potatoes and buttered carrots for a deliciously easy dinner. Coconut Brown Rice is perfect on the side!

Chicken Dinner number 4, Chicken Baked with Peaches Thyme and Dijon. The three flavors of peaches, thyme, and Dijon go perfectly with chicken. The juices from the baked chicken are perfect over fluffy rice. Buttered spinach goes especially well with this chicken main dish.

Chicken Dinner number 5, Chicken and Onions with Rosemary Toasted Crumbs and Parmesan Cheese. So easy all you need to do is add some potatoes to the oven while you bake the chicken and onions!

Chicken Dinner number 6, Grapefruit and Rosemary Grilled Chicken. Buttered corn (on the cob or off!) and asparagus go well with this easy grilled meal.

Chicken Dinner number 7, Chicken and Vegetables Skillet Meal. This tasty meal is all you need for dinner, maybe some whole grain bread and butter on the side. It doesn't get much easier than this one.

Chicken Dinner number 8, Pesto Chicken and Brown Rice with Baby Potatoes. While all eight dinners are delicious, this is one of the easiest! Just throw it all into your Instant Pot or any pressure cooker you have, electric or stovetop. Creamy, pesto-y (if that is not a word, it should be!), and delicious!

Chicken Dinner number 9, Pepper Thyme Chicken over Polenta with Bitter Greens. Present this stunning dinner at your next Sunday dinner or when friends come to share a meal with the family.
