We are talking about delicious non-lettuce salads the whole family will love. And double bonus, you will automatically be getting more of all the good stuff you want your family to eat (vegetables!), on the table, for your family to enjoy...
As life gets busier a non-lettuce salad is a perfect way to get more vegetables and whole grains on the table and into the meals that your family enjoys. As we continue to develop new recipes here at Scratch Made Food! & DIY Homemade Household and try recipes from other great cooks, we will update this list for you to enjoy...because eating more vegetables seems to be our mission!
Simple Carrot Salad can be made in a minute! It can also be made with the most basic of pantry ingredients! One of the easiest ways to add fiber and good taste to your meal, perfect for lunch or dinner.
Quinia Tabbouleh is the perfect recipe to introduce the family to the delicious pleasures of quinoa. I say that because I was late (very late) to the quinoa party and I am still learning about this nutritious grain.
Red Beet Salad with Cranberry Vinaigrette. Raw beets are quite delicious, and this salad with fresh apple and dried cranberries is wonderful The salty Feta pairs nicely against the vinaigrette.
Celery Root Carrot and Apple Slaw. Coleslaw doesn't get much better than this unique and delicious celery root slaw. Lightly sweet, mildly crunchy this just might be your new family favorite!
Tuscan Bean Salad with Tomatoes and Oregano. Garbanzo beans, tomatoes, baby greens, and a bit of cheese! This delicious salad is perfect as a side salad for four or a main dish salad for two. It is made with easy to obtain ingredients, many of which you will already have on hand when you cook with what you have!
Mark Bittman's Black Bean and Mango Salad. This unique combination is so good, and you would expect nothing less from Mr. Bittman! Keep some black beans in the pantry, pick up a mango and a fresh bunch of cilantro and you will soon be enjoying one delicious non-lettuce salad.
Kale Apple and Carrot Slaw. The perfect way to get those kale haters to eat some kale! This is one all slaw lovers will enjoy.
Fresh Pear with Gorgonzola Balsamic Vinegar and Toasted Walnuts. It probably takes longer to say the name of this starter salad, than to prepare it...
Easy and Delicious Pea Salad Plate with Tomatoes and Cashews. Don't let the name fool you, this is perfect year-round. However, it is especially delicious in the dead of winter.
Cottage Apple Salad. Simple and delicious. The perfect solution for those that enjoy the fresh flavor without added sugar.
Broccoli Salad with a Curry Dressing. Especially handy to make ahead on those really busy days!
Simple 3 Ingredient Beet Salad. A fresh way to enjoy those beets from the garden.
Crunchy Tangy Jicama Waldorf Salad. Crunchy, not too sweet, and the perfect way to serve a little jicama!
Moroccan Carrot Salad. Not your same ole carrot and raisin salad! Rich with flavor but no heat.
Root and Stem Salad. A delightful celery and celeriac salad with a creamy lemon dressing. Bold and delicious!
Shaved Brussels Sprouts and Apple Salad with Pecans. Raw Brussels Sprouts are delicious, and they really shine in this take on coleslaw!
Mary's Potato Salad. The potato salad of my childhood, my mom's recipe. Never written down (until now) but I must have watched her make it a hundred times through the years! And I think she would approve of the changes I made using the Instant Pot...
Watermelon with Mint and Feta. This salad is the favorite of all who love salty/sweet combinations of flavors! It is one of the most refreshing salads I have ever eaten. The preparation is simple, and this is the perfect recipe to make with young cooks in the kitchen...
Fresh Green Bean Salad with Tomatoes, Feta, and Toasted Walnuts. This is nothing like the 3 Bean Salad popular years ago. This is crunchy and delicious and your family will ask for it again and again!

For the Jicama style waldorf salad, you can use apples. But I encourage you to seek out Jicama!
