Chicken Bacon and Cabbage Skillet, is not only quick to make, frugal to serve, it is delicious! We are fans of fried cabbage in this house to begin with, but adding chicken and bacon elevates this to a dinner time favorite!
Like Chicken Bacon and Cabbage Skillet. While I could be very specific about the amounts, I certainly would not want you to to think that having a bit more or less of any ingredient should stop you from making this dish. In so many of the older cookbooks I use to own, it was a common phrase in the ingredients list to say, "as many walnuts as you can afford" in lieu of stating an amount. Because it was better to make the recipe with a few less walnuts than to not enjoy it at all! That's how I feel about bacon...
Even if I only had two slices of bacon in the fridge, I would still make this dish.
I have grown accustomed to creativity as one of the ingredients I use everyday. You see traveling for volunteer work with National Parks and State Parks as well as living an hour away from major shopping will teach creativity. A lesson I was happy to learn. I don't meal plan, instead I "shop" from my fridge and pantry for what I have, what needs to be used and I go from there. Sometimes it is something we have enjoyed time and time again. Other times it is something brand new.
More bacon please!
As more and more brands of nitrite free bacon become available in the marketplace, you will see more bacon in my recipes because I love it! Having a few slices left from an appetizer recipe that was not blogworthy, it was time for some fried cabbage. That is until my daughter suggested that I add some diced chicken and turn the side dish into a main dish. So I did! Chicken Bacon and Cabbage Skillet was our dinner last night, but trust me, it will make repeat appearances in the future! Please do not let the humble appearance fool you, this is one tasty meal!
Some additional thoughts on this recipe:
You can serve it as a "bowl" over brown rice.
But a baked potato on the side and some buttered peas will make a wonderful sit down dinner the whole family will enjoy.
We fried our cabbage in the leftover bacon drippings, but if you prefer, drain from the skillet and use oil of choice.
Ingredients needed for this recipe:
- cabbage
- bacon
- chicken
- onion
- garlic salt or seasoning
- fresh ground pepper
- oil if needed
You will also need the following:
- kitchen knife
- cutting board
- kitchen scissors
- large skillet with lid
- kitchen spoon
Now we are ready to begin!
Chicken Bacon and Cabbage Skillet
by the seat of my pants, inspired by a suggestion from my daughter
5 - 6 slices of bacon
3 - 4 boneless skinless chicken thighs
green cabbage, about 4 cups shredded
1 medium sized onion
garlic seasoning salt
fresh round pepper
oil if needed
Cut the cabbage in half (put half away for another use) remove the core, and cut into 1/4 inch slices. Set aside.
Peel and dice the onion, set aside.
Using the kitchen scissors, remove the excess fat from the chicken thighs, and cut into 3/4 inch pieces, set aside.
Dice the bacon, add it to the skillet and fry until golden brown. Remove from the skillet, drain on paper or cotton toweling and set aside. Drain all but 2 T bacon drippings from the skillet, add the onion and sauté just until beginning to take on some golden color.
Push the onion pieces to the edge of the pan, place the diced chicken in the center of the pan, season very well with the garlic seasoning and the fresh ground pepper. Note, you will need to add enough to season the cabbage that you will be adding in a few moments.
Continue to sauté until the chicken is beginning to brown. Add the cabbage and stir the mixture together.
Continue to cook for about five minutes stirring a couple of times. Place the lid on the skillet and reduce heat to medium. Let cook for about five more minutes, Stir gently replace the lid and cook for another five minutes.

Storage options for Chicken Bacon and Cabbage Skillet. Store leftovers covered in the refrigerator for up to three days. Reheat before serving. I do not recommend freezing this dish.
