Chocolate Cheesecake, a simple yet elegant offering.

Chocolate Cheesecake. After those two words, not much is needed to get one's attention! This easy to make dessert looks quite impressive and your guests will surely love it. Chocolate Cheesecake, it is the go-to dessert for the chocolate lovers in your family...



Truth is, we cook and bake using both of the following methods in this house, whole grain nutritious and delicious beyond words!


While I prefer whole grain, naturally sweetened baked goods, every now and again, my dear husband requires deserves a dessert that is a bit more indulgent. And this Chocolate Cheesecake is just that dessert. It is rich and chocolatey, and cheesecake, which are all of his favorites rolled into one spectacular dessert! And when it comes to dessert, don't we all deserve to enjoy it in full? 

It turns out he is not alone...


I know that for many, cheesecake is the dessert of choice for any and all special gatherings. This is easily verified by all the different cheesecake recipes available using a quick google search. But honestly we have a few here at Scratch Made Food!, because of his love of cheesecake! We even have a delicious, Blueberry Breakfast Cheesecake that we bake and serve when we have guests for brunch. And there is never very little left in the pan when we all get up from the table.



So good, it is good enough on it's own!


While you do not need to serve this Chocolate Cheesecake with anything extra, fresh strawberries in the springtime and raspberries throughout the summer offer a nice finish. For all other times, a little whipped cream and shaved chocolate are quite festive...we have even enjoyed slices of fresh persimmons in the fall. And don't forget crushed peppermint candy over a small cloud of whipped cream for all the other times of the year...like now!

The perfect dessert to make ahead!


Cheesecakes are the dessert of choice for making ahead. Why? Because they actually improve when given a bit of standing time. Once out of the oven a cheesecake needs to cool before being cut, but when made the day before and allowed to stand overnight, they cut cleaner and all the flavor marries together for a richer taste to enjoy. Plus think of how much that will free up your special day, so you can not only get everything accomplished, but enjoy it as well. 


Some additional thoughts on this recipe:

You will be making a chocolate crust, so if you are out of the other ingredients, don't shy away from using plain dry bread crumbs. Because the cheesecake you see in the photos, was made that way!

Do let the cheesecake chill before serving, or make it the day before and be ahead of the game. 

The cheesecake will fall gently in the middle, but this is to hold the extras that you might wish to add...


Ingredients needed for this recipe:
  • cracker or bread crumbs
  • baking cocoa
  • butter 
  • sugar
  • eggs
  • cream cheese
  • chocolate chips
  • flour
  • vanilla

You will also need the following:

  • measuring cups and spoons
  • glass measuring cup or bowl
  • mixing bowl
  • hand or stand mixer
  • spatula
  • springform pan

Now we are ready to begin!


Chocolate Cheesecake

Chocolate Cheesecake
adapted from Taste of Home
350-degree oven
UPDATED: 11.07.2023

crust:
1 c dry crumbs (graham cracker, chocolate wafer, or plain dry bread crumbs)
3 T melted butter
1/4 c sugar
3 T dry cocoa


Combine and press into the bottom of a 9-inch spring-form pan, set aside.

chocolate:
2 c semi-sweet chocolate chips

Melt chocolate chips in the microwave, set aside until needed. 

filling:
2 8 oz. packages of cream cheese
2 T flour
3/4 c sugar
2 eggs
1 t vanilla
reserved melted chocolate

Beat cream cheese, flour, and sugar until creamy. Add eggs one at a time, beating well after each. Add vanilla, mix well. 


Fold in the reserved melted chocolate chips, mix in completely. 



Carefully spoon cheese mixture into the spring-form pan, bake for 45-60 minutes or until done in your oven.




Let cool in the pan for 15 minutes, remove the spring side piece. Cool completely, before serving. Garnish as desired.

Storage options for Chocolate Cheesecake. Once out of the oven, store covered in the refrigerator loosely covered. Serve chilled from the refrigerator. You may freeze Chocolate Cheesecake, but there may be a loss of texture upon thawing.
