While it may seem easier to go out to eat, Mother's Day is one of the busiest days of the year for any restaurant! And for good reason, it is hard to convince mom that you are celebrating her, when she is the one cooking the meal. But we have some fun recipes to share that are not only delicious, they are really (no really!) easy to make, come and take a look.
One of the easiest ways to make any dinner seem special is to begin with a starter course, and I have two suggestions that are not only easy, they are beautiful and easy to make. Come and take a look at how easy it will be to show mom just how much she is loved!
The artichokes are easy to cook ahead (the day before), then simply stir together the sauce for Of Artichokes with a Savory Sauce at the last minute. You may serve this chilled, or if desired warm the cooked artichokes lightly in the microwave.
The main course can be anything she loves from a roast or ham to pasta or even something from the grill. Come and take a look.
A baked ham is so easy! Plus it goes with so many other easy to make side dishes. And the best part for a new cook, no gravy to worry about! But I do have a festive sauce that is easy to make to serve with the ham...
If the weather is warm and dry where you are, a BBQ would also be delicious. Plus it saves on clean-up in the kitchen...and anything grilled is always a fun meal to serve everyone in celebration of Mother's Day.
Or is salad is more to her liking, this Grilled Chicken Feta and Strawberry Salad with Lemon Vinaigrette is the one to try!
For something a bit more exotic, how about Pork Chops with Scallions, tender grilled pork chops finished on the stove for perfect tenderness!
How about a pasta dish?
This comfortable plate of spaghetti only takes one pot and a few minutes hands on prep time. One Pot Pantry Pasta with Ground Beef, is easy enough for anyone to make! Plus if mom loves pasta, she will love this dish! Pass the Parmesan...
It is not Chinese, and it is not (traditional) spaghetti. But what it is is delicious! Chinese Spaghetti is easy and just a little bit different, we think mom will enjoy it as much as we do.
A bit more work, but so delicious! Steak Pizzaiola is the one to show mom she is loved, just add a glass of red wine and a salad...by the way, this recipe calls for a chuck steak making is budget friendly too.
Side dishes are some of the easiest to cook, and yet, the hardest to think of! But my guess is, one or two of the following suggestions would round out the meal and make mom feel pretty special.
Butter and Cinnamon Glazed Carrots are an easy favorite to offer. If time is short it is easy to start with a package of frozen carrots and once cooked, simply make the glaze...
But no holiday celebrations is complete without dessert! If you prefer to take the heat off the cook for the day and purchase a dessert, I completely understand! After all, there is only so much time, and everyone should enjoy in the celebration. But if you want to make a dessert or special treat you might consider one of the following...
This Chocolate Chip Cookie Pie is what would result if chocolate chip cookies and pie became one! Yes, do add a bit of whipped cream!
This Brown Sugar Sour Cream Banana Bread could also be called "cake" it is that tender! Plus you can bake it the day before, making it easy for the cook to have a relaxed day.
Nothing is easier than a dessert that will serve itself! And this Root Beer Float Punch Bowl will make that happen. This is so much fun, you might want to be prepared to refill the punch bowl!
