When I started looking around the internet to scout out another,
quick and easy chocolate recipe, I came up short handed. In all honesty I definitely wanted a recipe that was quick to stir together as well as quick to get into the oven. From that viewpoint packaged mixes sure do seem like a great idea! But I already have an easy, homemade mix for a great little Mug Cake. A mix that even my hubby can whip up, for those times only chocolate will do! But I was thinking more along the lines of a cookie. And not a large batch of cookies at that. One bowl, one baking sheet, and only one pan to get baked, cooled and put on a plate, and serve.
Years ago I used to make a peanut butter cookie that fit that description.
One bowl, one baking sheet and only one pan to bake and serve. I have no doubt that you too made these same cookies. They called for one cup of peanut butter, one cup of sugar, and one egg. You got 12 of the best tasting peanut butter cookies ever! From that original recipe I went on to make them with almond butter, and yes, they were so good! After that sunflower seed butter, and yes, same results. Trust me they did not last long on the serving plate! And right about then, I thought, how about a chocolate version? What was not to try, all four boxes were ticked. Chocolate, easy, one bowl and one pan to bake.
As with all recipe development, it took a couple of batches to get them right!
For the first batch I cut back on the sugar and added cocoa, thinking that it would work. You know, dry ingredient for dry ingredient. And to be honest for flavor it sure did! They were (according to my taste testers) very chocolate-y but unfortunately they crumbled easily. My hubby not one to waste anything chocolate, simple enjoyed the crumbles in a dessert bowl, with a spoon, LOL! For the second batch I took a more scientific route....and the results paid off.
Dry cocoa is just that, dry.
So it only made sense when adding a dry ingredient that a wet ingredient would be needed to restore moisture balance. But what to use? I chose molasses. Why molasses? In the many years of cooking and baking, molasses has surprised me more than once. And usually that surprise is positive. I also knew a little goes a long way whether it is for flavor or for moisture. And a little bit was all I needed. And just like that we have a new, easy to make cookie recipe that is chocolate flavored, uses one bowl and only takes one sheet pan to bake the whole batch! Come and take a peek...
Ingredients needed for this recipe:
- peanut butter
- sugar
- cocoa
- egg
- molasses
You will also need the following:
- mixing bowl
- whisk
- silicone spatula
- measuring spoons
- measuring cups
- baking sheet
- serving palate or bowl
Now we are ready to begin!
Chocolate Peanut Butter Drop Cookies
by the seat of my pants!

350 degree oven
1 c peanut butter
1 c sugar
1 T cocoa
1 tsp molasses
1 egg
Place the sugar and cocoa in a medium sized mixing bowl, whisk the cocoa into the sugar. Leave no lumps of cocoa behind.
Add the peanut butter, molasses and the egg. Using a silicone spatula mix together until the sugar had been thoroughly mixed into the peanut butter, molasses and the egg. When mixed, there should be very few streaks of cocoa in the finished dough.
Divide into 18 balls of dough. Place on a prepared baking sheet. Press with a cookie press, or serving fork to flatten slightly. Bake 10-13 minutes.
Remove from the oven and let cool on the baking sheet for 5 minutes. Using a thin spatula, loosen the cookies from the baking pan and let cool in place for another 5 minutes. When cool, transfer to a serving bowl or platter.
Storage options for Chocolate Peanut Butter Drop Cookies. Store in a covered container at room temperature for up to three days. You may refrigerate or freeze for longer storage times.
