Watermelon with Mint and Feta! One of the best tasting, most refreshing bowls of fruit you will enjoy...Don't let the combination of ingredients frighten you, they go together as perfectly as the ocean and a sandy beach.
In our home in Vancouver we had a patch of mint. I called it a patch because mint has a reputation of taking over a garden or even the entire yard with its exuberance to grow! Because of this, when growing mint, we plant it in a large heavy-duty garden pot and sink that planter into the ground. Mint then has the comforts of being in the ground for temperature control and we get control over how far it spreads and takes over. This method works out quite well.
If you know someone that likes salt on melon, they will love this salad!
Mint is a simply wonderful to have in your garden, and it is important to the success of Watermelon with Mint and Feta summer salad! The salty Feta offers a delicious flavor contrast to the sweet fruit, and the mint brings both flavors together. Once I had made this salad, I instantly understood why as a child I noticed many of the adults at the table sprinkling salt on their watermelon. The salty sweet combination is delicious! But, for me as a kid, I did not understand salt on melon, I was all about the sweet...but times have changed!And now I love a sweet salty flavor combinations like this one. Watermelon with Mint and Feta is always refreshing and the watermelon offers a host of good nutrition. Vibrant-colored foods are always delicious and watermelon is no exception. But then again, red is my favorite color! I urge you to give this salad a try, it will be quickly become one of your favorites also. The recipe is easily made using half a standard watermelon. But don't be surprised if this is the first empty bowl at the table...but that won't be a problem, there is always the second half of the melon to fall back on!
Ingredients needed for this recipe:
- watermelon
- fresh mint
- feta cheese
You will also need:
- cutting board
- kitchen knife
- large bowl
- large serving bowl or platter
- measuring cups

4 c watermelon chunks, you can dice or use a fork for irregular shapes
1/4 c mint leaves, minced
3/4 - 1 c crumbled Feta Cheese
Using the cutting board, you may cut the watermelon into slices and continue to dice or chunk the melon into bite-sized pieces. Or you may use a fork to dig irregular pieces out of the watermelon while it is till in the rind. The choice is yours.

Remove the leaves from the mint stems. Wash, dry and mince.
In a large bowl combine the watermelon and the minced mint, gently fold the the mint into the melon. You may refrigerate until serving time if desired.
To serve, spoon the melon mixture into a shallow serving bowl or platter, then scatter the Feta Cheese over the top. You may refrigerate briefly if needed before serving.
Storage options for Watermelon with Mint and Feta. Store leftovers covered in the refrigerator for up to three days. I do not recommend freezing this dish.

DeleteI have mint in my garden, funny thing is it it contained in one spot, and its not in a pot. Maybe its a hardy selective type :). I eat Water melon on its own, never mix it with anything else even other fruits. I use it to cleanse my gut and then eat whatever else I may wish to eat after 30 mins.
