Celery Root Carrot and Apple Slaw

Celery Root Carrot and Apple Slaw is easy and delicious! We love this salad because it is delicious, and putting more vegetables on the table is always a good thing. This just might become a new family favorite. 


Years ago when the food pyramid was changed and the phrase "5-a-day for fruits and vegetables", came into being,

I thought, well the fruit part is easy, the vegetables not so much...after all, we all love fruit. We eat it fresh for snacks, as juice when we are thirsty, and often for dessert. But what about vegetables? They tend to be set aside for many reasons. One of which is delicious and creative ways to prepare them. Vegetables tend to be cooked and served hot, night after night...leading to boredom and few vegetables that are actually enjoyed. 

Even in our very own household. 

For so many years a salad meant tossed greens and an assortment of dressings to put on top. Much like the standard restaurant offering. But I have to be honest, I got tired of that definition of a salad and felt I needed to do something about it! I also become interested in eating more non-lettuce salads, because while I love tossed greens, overall I wanted a larger variety of vegetables as a part of our meals, and not just once in awhile.  


Which took me to the next step... 

Of looking for new ways to make slaw-type salads, using vegetables other than cabbage. This wonderful Celery Root Carrot and Apple Slaw is a winner on both fronts. And a delicious use of fresh fruits and vegetables that the whole family will love. The flavor is mild, the crunch is pleasing and the dressing is just the right amount of sweet and sour. 

Fortunately, with a large selection of non-lettuce salad recipes at the ready, a salad, each day is an easy way to round out dinner and get your 5-a-day in fruits and vegetables. Guaranteed!
 

Some thoughts on this recipe:

Peel or don't peel your vegetables as desired. For this salad, I prefer to peel both the apple and the carrots for consistency in the texture of the finished salad. 

Fresh parsley is one of the ingredients, if unavailable, make the dressing without it. You will still love this salad. You can always substitute dried parsley if desired. 

This salad is now swimming in dressing, feel free to double the dressing if you prefer. We all have our own preferences and yours should be the focus when you serve this at your table. 


Ingredients needed for this recipe:
  • celery root
  • carrots
  • large apple
  • mayonnaise
  • maple syrup
  • Dijon mustard
  • apple cider vinegar
  • fresh parsley
  • salt and pepper
You will also need the following:
  • kitchen knife
  • cutting board
  • vegetable peeler
  • box grater or food processor
  • measuring spoons
  • large bowl
  • small bowl
  • whisk
  • silicone spatula
Now we are ready to begin!



Celery Root Carrot and Apple Slaw

1 medium celery root (the size of a BIG grapefruit)
1 large apple - peeled if desired, we do not peel
2-3 carrots - peeled

1/2 c mayonnaise
1 T real maple syrup
1 T Dijon mustard
1 T Apple Cider Vinegar 
2 T fresh chopped parsley 
1/8 t salt, to start
fresh ground pepper

Peel if desired, then shred the celery root, apple, and carrots. Place in a large bowl for tossing with the dressing. 

To make the dressing, combine the mayonnaise, maple syrup, Dijon mustard, apple cider vinegar, parsley, salt, and freshly ground pepper to taste. Mix well, whisking until smooth. 

Fold everything together, let sit for about 30 minutes for the flavors to marry. Refrigerate if not serving right away. 

Storage options for Celery Root Carrot and Apple Slaw. Store covered in the refrigerator for up to 4 days. I do not recommend that this recipe be frozen.

  2. I too haven't seen celery root in a few years -- probably because we haven't been going to the farmer's market -- hoping next year we can resume our regular live, including going to the weekly market.

    1. I have several recipes where I use it, the larger problem for me is finding a nice one at the market. Our CSA share did not include a celery root, sadly. I love this salad, the shredded celery root is quite nice.
