We keep a bag of carrots around, all the time. Well most of the time, because the reality is, carrots like any other vegetable must be stored correctly or they will go to waste. Come and take a look at our easy way to store carrots for long term storage and some great suggestions on ways to use this delicious vegetable!
Carrots may be the most versatile vegetable in the produce aisle!
Why? Well for starters they are available the year round, making it is very easy to work them into your meal plans. And taking a look around our archives, we do seem to use a lot of carrots! They are delicious, raw in salads or cooked in a variety of side dishes. As well as main dishes and many of our baked goods and a dessert or two. We also use them in unique ways such as, a grated carrot tucked into a sandwich in place of lettuce.
Some of our routinely made favorites include this,
Vegetable Bouillon Concentrate, and these Taco Pickles! And our own Carrot Brown Rice. This easy. prep ahead rice dish is used in a number of ways, and each one is easy on the cook. Pus carrots also make great desserts and bread, and you certainly can't go wrong with that! A couple of my personal favorites are Carrot Cake Banana Bread, and Whole Wheat Carrot Chia Bread, one of our single loaf specialty breads! And of course my all time favorite, One Bowl Carrot Cake...
Ironically in all the ways we use and enjoy carrots, I must confess, I am not a carrot stick, kind of gal...but if you are, great. Do be sure to eat something with a little fat in it along with the carrot sticks so you get the full benefit of all that wonderful vitamin A.
Once home from the store, give that bag of carrots a few minutes of your time...
Sadly, more than once I have reached into the crisper drawer only to find a bag half filled with water and soft slippery carrots. I knew there had to be a better way to store carrots so they would last, until they were used up. It turns out that this easy solution, is quite simple. And only taking a few minutes of you time. Once done, just like that you will have crisp, dry carrots. I like it when a solution is so easy!
- Remove the carrots from the bag they came in.
- Use an ice pick or a bamboo skewer to poke holes in the bag for excess moisture to evaporate away.
- Six to eight holes should do it!
- Re-bag the carrots and store in the refrigerator.
Now let's get back to the star of the show, carrots!
We actually have far too many recipes that call for carrots to highlight all of them! To show how versatile carrots are, my plan is to offer a couple recipes in each category that are not the usual recipe found when you google "carrots". These will help to illustrate how well carrots can easily be worked into your meals.
Let's start with a couple of salads:
Moroccan Carrot Salad, is not only delicious, it is easy to make, and not to spicy. So the whole family will enjoy this one.
Moving on to Condiments and a Pantry Mix:
Vegetable Bouillon Concentrate. While I did share this recipe when working up the What's in your crisper drawer? Let's talk celery...post, I wanted to include it again, because there is not a better way to add a little extra flavor to your recipes than this easy to make recipe.
How about bread, both yeast and quick loaves:
Whole Wheat Carrot Chia Bread. The hardest part is grating the carrot, this is a bread machine recipe. With an oven bake, if preferred.
Easy vegetables and side dishes:
Carrot Brown Rice. Yes this is delicious as a side dish, but it is also a called for ingredient in many recipes here @scratchmadefood!

Oh yes, we have all the standard recipe such as One Bowl Carrot Cake, which I have already mentioned, because it is such a favorite of mine! A delicious Curried Split Pea Soup, and these Roasted Root Vegetables. I use carrots as often as possible when I cook because they are delicious, still frugal in price, and so very good for us. Do I have a favorite non cooking way to use carrots?
Yes we do. We enjoy taking the grandson for a walk down the road to give this shy horse a carrot to enjoy!
The broken end of the carrot is offered as proof of our visit. Once she smells the carrot, she stops forward to take it!
