Chocolate Chocolate Chip Bread Pudding, from your Pressure Cooker!

Chocolate Chocolate Chip Bread Pudding is the most delicious, frugal, and easy-to-make dessert you will ever eat! And it is made in your Instant Pot!



You will want to get to know this appliance!

Once you get comfortable using your pressure cooker, you will love using it! While I am still a "newbie", I have more confidence using this kitchen wizard than I had ever hoped to have, and it has made my life so much easier. My current electric pressure cooker is, in fact, an Instant Pot brand appliance. But this was selected on price ( during a great sale on Amazon ) and not for all the pre-programmed buttons. As a matter of fact in the beginning the preprogrammed buttons were rarely used. Recently however, we began using the yogurt button, and we now make our own No Boil Yogurt and we love it!

Buttons or no buttons...

Here recently I have begun to get my daughter on the band wagon for using the Instant Pot. I may or may not in the future persuade her to use it more, but for now that yogurt button is her best friend! While we are talking about those buttons, they are simply preprogrammed times already built in to the touch pad  so you only need to push one button. I love convenience, but as is my usual, I wanted more experience with using the appliance in general before using the buttons. The simplest way for me to learn, is to do, so I punched in the cooking times as needed. 

One fact holds true, cook the foods you love, and you will automatically be teaching yourself how to use this appliance!

And while I could continue talking about how much I enjoy having this appliance in my kitchen, this post is about a chocolatey, creamy, frugal, and easy dessert. I have been working on more desserts using not only my Instant Pot but also eggs and milk. Custard desserts are on my horizon at this time. One decision I made when I began using my electric pressure cooker years ago was to try a new recipe that also included a new skill or a new way of using the appliance. 


My favorite so far is pot-in-pot cooking. 

Using this method, I was on my way to great custards in no time flat. The beauty of these desserts is minimal hands-on preparation, quick-cooking time, a brief cooling, and finally chilling time in the refrigerator. Leaving you free to go about your day and yet still having a great dessert for the family or even just yourself. This Chocolate Chocolate Chip Bread Pudding is just such a dessert. Plus it is company-worthy, so you can count on it when you have guests over for supper or even just dessert...



We have made this a few times through the years, and I have to say it is just as delicious using whole wheat bread! Actually, we have not found any recipe we have transitioned to whole wheat flour, to be any different than before. 

An additional thought on this recipe:

Like most appliances, I have discovered that my Instant Pot cooks slightly different than many recipes I have tried. Mine seems to need an additional minute or two. Adjust the cooking time listed in the recipe if needed for your particular model. 


Ingredients needed for this recipe:
  • bread
  • evaporated milk
  • half and half
  • sugar
  • cocoa
  • salt
  • vanilla
  • chocolate chips
You will also need the following:
  • InstantPot or electric pressure cooker
  • mediums sized stainless steel mixing bowl
  • foil
  • measuring spoons
  • measuring cups
  • whisk
Now we are ready to begin!



Chocolate Chocolate Chip Bread Pudding
adapted from: Old Fashion Egg Custard in your Pressure Cooker!

1/2 c sugar
2 T cocoa
3 eggs
1 t vanilla
dash of salt
1 12 oz can of evaporated milk
1/4 c milk or half and half 
3 slices of bread, torn or diced into small pieces
1/3 c chocolate chips


In a 1 1/2 quart mixing bowl (heat-safe, this bowl will go into your pressure cooker) combine the sugar and the cocoa powder. Beat in eggs, salt and vanilla. Gently stir in the evaporated milk and milk or half and half. 



Stir in the bread pieces, making sure that the bread is coated with the milk.



Gently scatter the chocolate chips over the top. Cover the bowl with foil, pressing firmly around the rim. 

Place 1 1/2 - 2 c water in the pressure cooker pan, depending upon the size of your cooker, and place a trivet in the bottom. 

Gently lower the foil-covered bowl onto the trivet.

Secure the lid, and cook for 10 minutes, let the filled cooker sit for 5 minutes (NPR), then release the pressure.
 
Remove the lid, carefully remove the bowl, and let cool before refrigerating.

Serve chilled with whipped cream. And for the die-hard chocolate lovers in our family, a drizzle of chocolate syrup is a must!

Storage options for Chocolate Chocolate Chip Bread Pudding. Store covered in the refrigerator for up to three days. I do not recommend freezing this dish.
