Currently I have half of a head of cabbage in my crisper drawer. But it wasn't always that way, As a matter of fact it has been fairly recently that I have come to see and use cabbage for the versatile vegetable that it is! Come and take a look at how we enjoy preparing cabbage and maybe you too will find a few more ways to enjoy this easy to prepare vegetable!
we have a standard grocery list when we go to the market. I has the basics that we tend to buy each time we visit, and cabbage is on that list. One reason is that it is good raw in a salad as well as cooked and served aa s side dish vegetable. And I would be remiss to not mention that Cole Slaw has been a real favorite to put on the table!
Simply put the full or cut head in a plastic bag and place it in the fridge. Keep the cabbage dry and it will last a long time. If it does take on a slight brown or gray color on the cut edge, simply trim it off. It is oxidation and harmless. The same goes for any outside leaves that might have taken on a yellow hue. Cabbage will take on a bit of a peppery after taste, when it is getting old. But again it is harmless. When that happens I usually fry the cabbage in butter with some onions!
Freshly harvested cabbage is often the sweetest.
And my preference for Cole Slaw. But that is also true of a new head of cabbage that has yet to be cut, it is sweetest when you first cut it. And one reason the first dish I make with a new head of cabbage is often Cole Slaw. Chicken Bacon and Cabbage Skillet. A skillet meal is the way to go when time is tight and everyone is hungry now!
Stove Top Cabbage Rolls. I love cabbage rolls, and these simmer on the stove, leaving the oven for a cobbler...or a cake!
