Italian Sausage Polenta Pie

Super easy, and so delicious! Bake up a pie pan of polenta with sausage, onions, and garlic for Italian Sausage Polenta Pie! Add a ladle of red sauce, and a sprinkle of fresh Parmesan cheese for a delicious dinner that is homemade and pretty easy on the cook!


How to make Italian Sausage Polenta Pie.

Making a savory dinner pie is as easy as baking your delicious creation in a pie pan. 

Which is what I did! We love polenta in this house and conveniently we also love Italian sausage. Flavor wise, they are best friends in the cooking world! And in the natural order of things, it was only a matter of time before some Italian sausage was stirred into a pot of cooked polenta, then poured into a baking pan to create a delicious dinner pie that the whole family loved! 

Often we combine a couple of our favorites and come up with a new dish, and while it is simple to do, they all don't turn out this good. But when they do, the only thing left after eating, is to share it here! 


Are you a polenta fan? Italian Sausage Polenta Pie.

Polenta is so easy to make, but depending on the type, you might need to plan ahead for the cooking time. 

We use a quick-cooking polenta, which is nothing more than a finer milled product. Since the pieces are smaller, the cooking time is shorter. If you cook the sausage with a bit of onion and garlic while the water for the polenta is coming to a boil, Italian Sausage Polenta Pie comes together super fast!

From there a quick bake in the oven is all that is needed. Cook up some green beans, or broccoli, maybe put a fruit plate together and just like that, dinner is done. But the best part? Dinner is freshly cooked in your own kitchen, by you, for those you love! That combination of ingredients are always the perfect seasoning...and everyone gets to eat together. The perfect time to get caught up from the day.

Some thoughts on this recipe:

While I have recommended this red sauce, feel free to use your own favorite. 

When choosing a red sauce, remember to use one that is not overly seasoned so that you can enjoy the flavors in the pie!

If you wish you may make the red sauce the day before, simply warm it up when the Italian Sausage Polenta Pie comes out of the oven. 


Ingredients needed for this recipe:
  • Italian sausage
  • olive oil
  • polenta
  • onion
  • garlic
  • salt
  • pepper
  • Parmesan Cheese
  • red sauce, we like this one
You will also need the following:
  • frying pan
  • cutting board
  • kitchen knife
  • medium-sized saucepan with lid
  • deep-dish pie plate
  • measuring cups
  • measuring spoons
  • silicone spatula
Now we are ready to begin!


Make a mid-week dinner pie, Italian Sausage Polenta Pie.

Italian Sausage Polenta Pie
by the seat of my pants
350-degree oven

1 pound Italian sausage - bulk style
1 onion, diced
2 to 3 cloves garlic, minced
1 T olive oil
Parmesan Cheese
1 c Polenta
water and salt as listed on the polenta package 
Red Sauce for serving, I recommend this one. Not only simple to make but delicious to eat!

Dice the onion and mince the garlic, set aside. 

In a large skillet, drizzle the olive oil, add the diced onion and the minced garlic, begin cooking over medium heat. Crumble the Italian sausage over the onion pieces and garlic. 

Cook stirring frequently over medium heat until the sausage is cooked and the onion pieces are tender.  Drain off excess fat. Set cooked sausage mixture aside until needed. 

Bring the listed amount of water and salt from the polenta package to a boil. Slowly sprinkle the polenta into the water. Carefully cook the polenta until thick, taking care, is not only hot but will often "spit" up when boiling. 

When the polenta is cooked, immediately stir the sausage mixture into the polenta along with a generous amount of Parmesan Cheese. I use my old standby favorite with the green lid! 



Turn the polenta and sausage mixture into a deep-dish pie plate. You may sprinkle additional Parmesan Cheese over the top if desired. Bake 35 to 45 minutes. Remove from the oven and let rest 10 minutes. 

Cut into wedges and serve with red sauce and additional Parmesan cheese if desired. 

Storage options for Italian Sausage Polenta Pie. You may refrigerate this pie for up to three days. While I have not tried this frozen, I would not recommend that this dish be frozen.
