Chocolate Crusted Chocolate Chip Cheesecake Bars.

It was time to develop a bar cookie recipe that would check all the boxes on the flavor scale my husband has shown he loves. Cheesecake, check! Chocolate, check! And how about delicious, check! And yes, Chocolate Crusted Chocolate Chip Cheesecake Bars are as delicious as the name is long! 




With my recent realization that I needed to eat a low histamine food plan

for awhile or until my gut improves significantly, cooking and baking for fun, quickly took a backseat! Today however, it was time to come up with a dessert that my hubby would enjoy that also checked all the boxes on his preferred dessert list of favorites. Such as cheesecake, chocolate and delicious! In case you are new here, cheesecake is his absolute favorite flavor, with chocolate coming in a close second. Which led to creating this Chocolate Cheesecake a few years back! 



And while he never tires of a dessert that checks all the boxes, 

and enjoys it down to the last crumb. I will often make a smaller version with it being just the two of us. Which is how cheesecake bar cookies became the focus for this recipe. I will say it again, cooking smaller portions is a bit more challenging than making more, back in the day when the family got larger! But I also have to admit that small batch recipe development does get easier with each successful recipe I can produce. And trust me, this one, will be made again!



Like most of my recipes it calls for basic pantry ingredients, 

the only thing you need to be remember to toss into the cart when out marketing is a package of organic cream cheese. And yes, you did see correctly. That is an recycled envelope from yesterday's mail used as scratch paper to scribble out my thoughts before heading to the kitchen. The difference between this recipe and many of the others? This one actually made it to the blog! Honestly not all of them do. Recipe development is a lot like walking down a road you have never traveled before, you have no idea what you will find along the way...




How about we make a pan of Chocolate Crusted Chocolate Chip Cheesecake Bars? I think you are going to enjoy them! To serve, cut them small as bite sized bar cookies, or larger for a slice of cheesecake and serve on a plate. Either way, these will please the chocolate lover and the cheesecake lover that lives at your house!


Ingredients needed for this recipe:
  • whole wheat flour
  • cocoa 
  • brown sugar
  • butter
  • cream cheese
  • sugar
  • egg
  • vanilla
  • sour cream
  • chocolate chips
You will also need the following:
  • 8 inch baking pan
  • medium sized mixing bowl
  • pastry blender or kitchen fork
  • hand mixer
  • silicone spatula
  • measuring cups
Now we are ready to begin!



Chocolate Crusted Chocolate Chip Cheesecake Bars
by the seat of my pants
350 degree oven

1 c whole wheat flour, we used sprouted white wheat flour
1/4 c brown sugar
2 T cocoa
1/4 c butter
1 8oz package of organic cream cheese
1 egg
1/3 c sugar
1/4 c sour cream
1 t vanilla
1/2 c semi sweet chocolate chips

In a medium sized mixing bowl, combine the whole wheat flour, brown sugar, cocoa and the butter. 




Using a pastry blender, cut the butter into the dry ingredients until the mixture is crumbly. You may also use a fork or your hands if desired. 




Empty the crumbs into a prepared 8 inch baking pan. Gently pat the crumbs evenly into the bottom of the pan, but do not pack down. Bake for 12 minutes, remove and let cool while making the filling. 




Place the cream cheese, sugar and egg into a medium sized mixing bowl. Using a mixer combine the ingredients until smooth with no lumps left behind from the cream cheese. Add the vanilla and he sour cream, mix well. 




Carefully spoon the cheesecake filling over the baked crust. Then scatter the top with the chocolate chips. Bake 25 minutes or until done in your oven. Do watch the top of the cheesecake filling for over browning. Reduce oven heat if needed. Remove from the oven and cool completely before cutting into bars. 


Storage options for Chocolate Crusted Chocolate Chip Cheesecake Bars. Store covered at room temperature for up to 24 hours, the refrigerate for longer storage time. I do not recommend freezing this recipe.
