Cranberry with Thyme Vinaigrette

We love this Cranberry with Thyme Vinaigrette. It is fresh and delicious! Hands down, homemade salad dressings are fresher and more creative than store-bought. Plus you know exactly the ingredients used in your salad dressing... 


Want to still eat well, and save some money?

If you are like me, you are tired of the high price of bottled salad dressings. There is a solution. Cut out the high cost of convenience, make your own salad dressings. It is easy and there are so many ways to customize the flavor and my guess is, the ingredients are already in your pantry! 

Salad dressing is one area I have wanted to take control of in the kitchen, for some time now. For us, purchased salad dressing is not only expensive but has ingredients I don't cook with, in my own home. It finally dawned on me, if I don't cook with it, I don't want it as an ingredient in a purchased product either. One of our favorite way to be prepared for salad is to keep a couple of different flavors of homemade salad dressing in our refrigerator. 

Most of my life I had a love affair with Creamy Blue Cheese Salad Dressing!

I have been a lover of creamy blue cheese salad dressing my whole life! And I could go on eating that as my only salad dressing for the rest of my days. But I don't always have a wedge of blue cheese in the fridge and honestly, the time had come to branch out. Enter Cranberry with Thyme Vinaigrette...

I started making homemade salad dressing a few years ago, but now it is the only way to go. I will always love a creamy blue cheese dressing, but I have been pleasantly surprised at how much I enjoy a freshly made and perfectly seasoned vinaigrette. So much so, that there are a number of delicious vinaigrettes right here on the blog. 

How do you enjoy a winter salad?

For winter salads why not try a delicious medley of Tuscan Kale, Romaine, and Baby Spinach. For us, the Tuscan Kale was a wonderful surprise, it is tender and delicious in a tossed salad. And as it turns out, the more we experiment with various leafy vegetables, the more we enjoy a salad as part of our meals

This Cranberry with Thyme Vinaigrette is perfect to drizzle over mixed salad greens, then top with a sharp creamy cheese such as Blue Cheese or Feta. There is one thing I have recently learned, cheese on top of the salad is just as delicious as in the dressing.....it is a win-win for me!

Ingredients needed for this recipe:
  • dried cranberries
  • red wine vinegar
  • honey
  • thyme
  • oil, your choice olive or avocado
  • salt
  • fresh ground pepper
You will also need the following:
  • small sauce-pan
  • measuring spoons
  • measuring cup
  • cutting board
  • chef's knife
  • storage/shaker bottle 
Now we are ready to begin!


Cranberry with Thyme Vinaigrette

Cranberry with Thyme Vinaigrette
by the seat of my pants

2 - 3 T dried cranberries
3 T water
1/4 c red wine vinegar
2 T honey
1/4 (rounded) t thyme - crumbled

1/2 c oil - olive or avocado
1/4 t salt
pepper, 2-3 grinds

Chop cranberries until finely minced. Combine minced cranberries water, red wine vinegar, honey, and thyme. 

Bring to a boil, cover, remove from the burner, and set aside to cool.

Combine cooled cranberry mixture with remaining ingredients in a screw-top jar or other tight lidded container, shake well before serving. 

Refrigerate leftovers.

Storage options for Cranberry with Thyme Vinaigrette. Store covered in the refrigerator for up to 7 days. Shake well before drizzling over salad greens.
