This Simple Carrot Salad is not only easy to put together, but it calls for basic pantry ingredients. Carrots are tossed together with apple cider vinegar and a touch of lemon juice, is tangy and naturally sweetened. Come and take a look, this salad is an easy way to round out any meal.
It turns out that this carrot salad is quite popular right now. A fast paced video can get the message out very quickly!
But videos aside, there are many nutritional reasons to make this salad. It is quick to prepare, calls for wholesome ingredients and it tastes great. Along with gut healthy fiber, something we all need more of. While this was introduced to the world via a quick paced video, I decided to give it a go. And I am glad I did. We do make this regularly and it is often on my plate at lunch time. Lunch is the least favorite meal for me, as it requires me to come inside from the garden or tending to other outdoor chores. So I often keep this salad made in advance and stored in my fridge. It is there, quietly offering more nutrition to my lunch day meal. Which usually consists of a sandwich on my whole wheat bread, along with this salad top dressed with a bit o olive oil.
Plus Simple Carrot Salad is a great way to get more vegetables on the table,
and vegetables are some of the easiest ways to get your allotment of dietary fiber...now I know fiber is not a hot topic of discussion in food preparation conversations. But honestly, we all need it and it is absolutely necessary for good health. In the gut especially and in general, to help with proper digestion. Fortunately organic carrots are available the year round, and around here we find ourselves making this salad often. My usual kitchen routine is to make it up, enjoy it as the days go by, and then in about a week make it again. It is your choice, you can make it with or without the apple. I trade off and go apple free from time to time. But don't forget the chia seeds...and while this is touted as an oil/fat free recipe, I urge you to forget that. Vitamin A found in carrots is a fat soluble vitamin and needs fat to be absorbed by the gut. So I top dress with a bit of cold pressed olive oil after dishing up my lunch plate.
What is sweet for you? Or sweet for me?
We all have our own idea of what is sweet to each of us, and with this salad it is so easy to adjust the level of tangy sweetness. If you want a bit more sweetness in the overall flavor, simply grate a larger apple! Or if you prefer you may cut the apple into small dice. And please, go with your own personal preference regarding whether to peel or not peel the carrots. Ditto with the apple. The beauty of organic produce is that peeling is not necessary and those peels do contain nutrition along with fiber. Yep, I did say that dreaded "F" word again! But then again, around here, health is wealth!
And like the best recipes, the preparation of Simple Carrot Salad couldn't be easier.
Just grate the carrots and apple, add the remaining ingredients, and toss together. Let it rest at room temperature until ready to serve. If made ahead, early in the day, store in the refrigerator...it makes a great addition to your lunch, but don't leave out dinner. Maybe at your house dinner is the busiest time of the day. And this is also delicious when added to a sandwich like folks often do with cole slaw...
Ingredients needed for this recipe:
- carrots
- apple
- chia seeds
- apple cider vinegar
- lemon juice
- salt
- fresh ground pepper
- olive oil for serving
You will also need the following:
- box grater
- vegetable peeler
- measuring spoons
- medium size mixing bowl
- silicone spatula

4 medium to large carrots
1 medium to large apple
1 T and 1 t chia seeds
4 t apple cider vinegar
2 t lemon juice
2 pinches of salt
fresh ground pepper
olive oil for serving
Peel the carrots, if desired and grate them directly into a medium sized mixing bowl. Wash, dry and grate the apple. Or cut into small dice.
Add the remaining ingredients and mix together.
Transfer to a serving bowl, and let rest at room temperature until meal time, about 20-30 minutes. If made ahead, cover and store in the refrigerator. When ready to serve, top dress each serving of salad with olive oil, if desired.
Storage options for Simple Carrot Salad. Store covered in the refrigerator for up to three days. I do not recommend freezing this dish.
