Winter Pea Salad Plate with Tomatoes and Cashews

Winter Pea Salad Plate with Tomatoes and Cashews is a fresh breath of air, for winter salads! This delicious salad calls for frozen peas, which is perfect, because good quality frozen peas are available year-round, but always a favorite in winter!


Truth be told frozen foods are a good source of nutrition!

It turns out that foods frozen at their peak are much more nutritious than those in cold storage, so don't pass up quality frozen fruits and vegetables thinking that there is a loss of nutrition when served to the family. Around here, eating more vegetables is always our goal, and salads play a big part in achieving that goal. And while we love a tossed green salad, many of our favorites are not lettuce-based. And this Winter Pea Salad Plate with Tomatoes and Cashews is one of our favorites!


I have found that it is so easy to get into a food rut, and while I try to not let that happen, during busy times it just does! I think it can happen to us all and our meals start to look like the following: a main dish, a potato or noodle side dish, and a cooked vegetable

When that happens around here I know we need to climb out of the food rut and eat more variety. 

A vegetable-based salad is one way to go. After this tasty Winter Pea Salad Plate with Tomatoes and Cashews, I encourage you to also try this Moroccan Carrot Salad and the Avocado Caprese Salad. All three salads are winter favorites at our house...because they call for easy to obtain produce, even in the heart of winter. 

Since Winter Pea Salad Plate with Tomatoes and Cashews calls for basic ingredients, is quick and easy to make, keeps well until serving time, and (of course!) tastes wonderful, this salad is one your family will enjoy time and time again! And delicious food is one way to stay out of that food rut!


Winter Pea Salad Plate with Tomatoes and Cashews

Some thoughts on this recipe:

If you prefer, for more crunch, you may scatter the cashews over the salad right before serving. 

I like serving this from a platter, but feel free to use a serving bowl. 

You can easily turn this into a main dish salad by upping the amount of ham used.


Ingredients needed for this recipe:
  • frozen peas
  • onion or our favorite Quick Pickled Onions
  • celery
  • parsley
  • diced ham
  • diced cheddar cheese
  • mayonnaise
  • sour cream
  • garlic salt
  • fresh ground pepper
  • Angostura Bitters
  • hard-cooked eggs
  • Roma tomatoes
  • cashews
You will also need the following:
  • measuring spoons
  • kitchen knife
  • cutting board
  • measuring cups
  • large mixing bowl
  • silicone spatula 
  • whisk
  • small mixing bowl
  • serving platter
Now you are ready to begin!

Winter Pea Salad Plate with Tomatoes and Cashews
by the seat of my pants

2 c frozen peas - thawed and drained (10oz pkg.)
1/2 c diced celery (use the tender inner ribs if possible)
1/2 diced ham
1/2 c diced cheddar cheese
1/4 c diced red onion or our favorite pickled red onion

1/4 c sour cream
1/4 c mayonnaise
1/8 t garlic salt
fresh ground pepper
heavy dash of Angostura Bitters

2 Roma tomatoes - quartered lengthwise
2 hard-cooked eggs - diced
1/3 c coarsely chopped flat-leaf parsley
large handful of salted cashews

Prepare the vegetables as needed. 

In a large bowl, combine the thawed and drained peas, celery, ham, cheddar cheese, and onion pieces. Toss gently and set aside.

In a small bowl, combine sour cream, mayonnaise, garlic salt, pepper, and bitters. Whisk together until smooth. Pour over the pea salad mixture, gently fold the dressing into the vegetables.

Arrange on a serving platter, add tomato pieces, diced egg, parsley, and cashews. Cover and chill until serving time.

Storage options for Winter Pea Salad Plate with Tomatoes and Cashews. Store covered in the refrigerator for up to three days. Do not freeze this dish for a longer storage time. Note: even in the refrigerator the cashews will soften in texture.
