Grilled Chicken Feta and Strawberry Salad with Lemon and Honey Vinaigrette.

How about a beautiful Grilled Chicken, Feta and Strawberry Salad with Lemon and Honey Vinaigrette for your dinner tonight? What would you think about a salad like this when camping? While it can seem difficult, it can easily be done...but then again, if this can be made and served at camp, think how easy it will be to whip up at home!


When shopping once a week, we eat the fresh veggies first!

We try to (only!) grocery shop one time each week, when on the road camping. Mainly because it is hard to store everything when you over purchase fresh food and produce. RV refrigerators are a bit smaller than a household model. So we try to have a main dish salad on grocery shopping day. In that way, we continue to eat well, and there is much less to try and store in the fridge. For this composed salad we bought 2 large heads of butter lettuce, an 8oz slab of Feta, and a quart of strawberries.  We thawed three chicken breast halves to grill. 

This beautiful salad is nothing more than a simple composed salad. 

Put together in a production line, style of cooking. As we assembled the plates, my son in law cut the chicken breasts in half lengthwise to fillet them, added a bit of seasonings then grilled them. Let the grilled chicken rest a few moments, then cut into strips, so it may cool and not overheat the lettuce. You may certainly use your favorite lemon vinaigrette, but I have offered a simple recipe that has a touch of honey in it. 


Ingredients needed for this recipe:
  • butter lettuce
  • a block or slab of Feta cheese
  • Strawberries
  • chicken breasts
  • lemon juice
  • avocado oil
  • Dijon Mustard
  • salt
  • pepper
  • honey
You will also need the following:
  • small mixing bowl or glass measuring cup
  • measuring spoons
  • measuring cups
  • whisk
  • serving bowls
  • grill or frying pan
Now we are ready to begin!



Wash, shake dry, then break the lettuce on each serving plate. 

 

Cut the Feta into large squares, scatter over the lettuce. 



Add the cut up chicken. 



And lastly, add those beautiful strawberries!



Combine the ingredients for the lemon vinaigrette, drizzle evenly over the salads. We served our salad with "waffled" biscuit dough, biscuits. 




Lemon and Honey Vinaigrette

1/2 c avocado oil
1/4 c fresh squeezed lemon juice
salt and pepper to taste
1 t Dijon Mustard
1 T honey

Combine all ingredients in a small mixing bowl or 2 cup measuring cup. 

Whisk to combine well. 

Drizzle over each salad, offering any leftover dressing at the table.

Storage options for Grilled Chicken Feta and Strawberry Salad with Lemon and Honey Vinaigrette. I don't recommend storing dressed salad due to the quick breakdown of the lettuce greens. But any remaining vinaigrette can be stored for up to seven days in the refrigerator.

I live in a condo half the year with a refrigerator that is smaller than I usually enjoy. I have to make lots of adjustments as well. Your salad looks healthy and delicious.
