I am not shy about sharing my frugal beliefs and the ways to manage food creatively. And this salad is proof that frugal can also be quite delicious! The act of frugal food management is preparing and enjoying food while using what you already have on hand, in a timely manner. To get the most nutrition and enjoyment out of what you prepare and serve at meal times.
This may include a bit of a trial and (possible) error. But I will tell you right now, this is also a fun and delicious way to let your creative juices flow! But cooking on the fly is not new. Your grandmother did it every day of the week in her kitchen. Plus she probably didn't have a store five minutes away or meal delivery services available...
Especially in today's inflationary times, frugal is a good way to be...
It can also be a fun journey for you to follow, in your own modern kitchen as well. I invite you to honor your family's past and, cook with what you have. Because that is exactly how Kale Apple and Carrot Slaw came to be. This salad is best made in the morning for lunch or dinner later that day. It allows the kale to soften just a bit. However if time is tight, simply massage the kale before adding it to the rest of the ingredients, that will do the trick.
Kale Apple and Carrot Slaw remains crisp tender with a nice crunch, and does not end up swimming in too much dressing. Plus Kale Apple and Carrot Slaw can be easily turned into a main dish salad with the addition of protein such as diced ham or cheese...or any other protein of your choice. And honestly this is how I dress up leftovers, turning them into lunch for the next day. Come on, let's make a Kale Apple and Carrot Slaw, because these ingredients are available throughout the year.
Ingredients needed for this recipe:
- Tucson Kale
- carrots
- apple
- raisins
- yogurt or sour cream
- mayonnaise
- apple cider vinegar
- brown sugar, you can make your own if desired, recipe found here.
- salt and pepper
You will also need the following:
- kitchen knife
- cutting board
- grater
- carrot peeler
- measuring spoons
- mixing bowl
- serving bowl

Kale Apple and Carrot Slaw

1 head Tucson Kale, washed, dried with center ribs removed, sliced thinly crosswise
1 apple, cored and diced small - no need to peel
1 large or 2 regular carrots, peeled and shredded
1 handful of raisins, chopped
2 T mayonnaise
2 T sour cream or yogurt
1 T Brown Sugar
1 T apple cider vinegar
dash salt
fresh ground pepper

Prepared vegetables for Kale Apple and Carrot Slaw. |
Prepare all vegetables as indicated. Place prepared vegetables in a large mixing bow, toss gently to mix together.
Add the dressing ingredients. Combine all ingredients, stirring well. Cover and let chill until mealtime. Transfer to a serving dish, and serve.

Storage options for Kale Apple and Carrot Slaw. You may store covered in the refrigerator for three to five days. Do not freeze for longer storage time.
