Let's Go Coconuts! Granola.

Granola has come a long way since the days of love and light from the 60's! And since I was actually there (yep, I am that old...) it has come a long way in my kitchen as well! Let's Go Coconuts! Granola is its own special treat, come and take a look at why...


Glorious granola is my breakfast of choice.

In my quest to have as many delicious flavors of granola to choose from (to rival the grocery store!) as possible, it was time to get radically creative. And I am so glad I did! Let's Go Coconuts! Granola is flavored deliciously and geared more towards an adult palate. Sweetened and flavored with coconut sugar it yields a rich caramel flavor with a bitter-sweet chocolate finish. And when you are finished eating the granola you have delicious caramel milk in your bowl, to sip... 

It doesn't take a long list of ingredients...

The recipe list is short and for good reason. When you begin with basic ingredients that come together in a surprisingly delicious way, you don't need any extra stuff in the mix. I do have a basic ratio formula for my granola making, but each one yields a new flavor to enjoy, so that you will want to get your oats in, every day! 


Keep an eye on that sugar...

It appears that Let's Go Coconuts! Granola has a lot of coconut sugar. But do keep in mind that coconut sugar is not refined and has approximately 1/4 of the sweetening capacity of regular sugar or honey. My usual formula calls for a cup of honey. The combination of the coconut sugar and the smaller amount of honey is right in line with sweet, but not overly sweet. Making it a delicious bowl of granola to enjoy...As with all my granola recipes, this one can be dressed up or down with minor changes to the ingredient list. When you cook for your family, it is important that the final dish is one you will want to serve.


Some thoughts on this recipe:

You will need to use a small amount of water in order to mix all the ingredients thoroughly. 

Due to the use of water, I do recommend the pottery plate test, suggested below. It works well as the granola cools almost immediately. 

While the recipe as written does not call for nuts, I did stir in some pumpkin seeds at the end and they are perfect in the mix of flavors.

Due to the rich color of the coconut sugar, the mixture starts out darker than most recipes and bakes to a rich caramelized color. 


Ingredients needed for this recipe:
  • regular oats
  • coconut sugar
  • coconut oil
  • large coconut flakes
  • vanilla
  • salt
  • water
You will also need the following:
  • large mixing bowl
  • measuring cups
  • measuring spoons
  • kitchen spoon
  • silicone spatula
  • large baking pan
  • storage container with a tight-fitting lid
Now we are ready to begin!



Let's Go Coconuts! Granola
by the seat of my pants!
350-degree oven

5 c oats, we use sprouted oatmeal for granola 
3 c coconut flakes
2 c coconut sugar
1/2 c coconut oil
1/2 c honey
2 T water
2 t vanilla
generous 1/4 t salt

Combine the dry ingredients into a large mixing bowl. Mix well to distribute the coconut sugar. Sprinkle on the salt.



Combine the coconut oil, honey, and vanilla, and pour over the dry ingredients. Sprinkle on the water. 

Mix together gently to mix everything together evenly.

Prepare a large baking pan (I do use pan spray, this is a bit sticky)



Spread the granola evenly in the pan.

Bake 350 for 15 minutes, stir, bake for 10 minutes and stir, bake another 10 minutes and stir. 

Take a few oats and place them on a pottery saucer and let cool. If crunchy the granola is done. If still a bit chewy bake another 10 minutes then remove from the oven. Stir. 



To prevent the whole pan from sticking together, let cool for 5 minutes, and stir. , Set the timer for 5 minutes and stir. And the final 5 minutes and stir. 

Let cool completely and transfer to a storage container with a tight lid. 


Also delicious with pumpkin seeds!

Storage options for Let's Go Coconut! Granola. Store in a container with a tight-fitting lid. You can store it at room temperature for up to three months. You may store it in the freezer for longer storage times.
