My Favorite No-Bake Cookies

I love these cookies, My Favorite No-Bake Cookie, are fudgy, crunchy and everyone loves them! But I don't make them all the time. The reason? They are my secret weapon...for those times I need something delicious and I am short on time. 


This recipe is the one for those busy times!

Yes, this is the recipe I pull out when I need something delicious and need it NOW. Need is an interesting word, so maybe I should clarify, I don't need them personally like a craving (but trust me, they are definitely crave-worthy!). No these are the cookies I save for those times when I need something for the family to enjoy and I just don't have the time to invest in a complicated recipe. Plus I love making up something I already know is a winning recipe!

Every mom and grandmother in every family makes this recipe!

My Favorite No-Bake Cookies are easy to make, taking just minutes, and require no oven time. They are a saucepan cookie recipe which means only one pan to wash. Once they are dropped onto the wax paper to cool down, and set up into little fudgy mountains of deliciousness, you are done. They do need about 30 to 45 minutes to set up and cool completely, so plan ahead if you need to package them as a gift. And yes, they do make a great gift to any chocolate-loving cookie eater! I don't know a family anywhere that does not love these cookies. 

These cookies are one of the best, made only from pantry basics!

The ingredients called for are basic, nothing fancy or out of the ordinary. Your own well-stocked pantry will make it possible for these cookies to be made time and time again. Plus there is some leeway in the ingredients call for. Feel free to use either smooth or chunky peanut butter, what ever you have on hand is fine. And because I always advocate cooking with what you have, pecans make a great stand-in for the walnuts...my only complaint? I didn't get many photos...But they are truly so simple to make, you will do a fine job, with this one photo!


Ingredients needed for this recipe:
  • sugar
  • butter
  • milk
  • dry unsweetened cocoa
  • peanut butter
  • vanilla
  • coconut
  • oatmeal
  • walnuts
  • mini marshmallows
You will also need the following:
  • measuring cups
  • measuring spoons
  • large saucepan
  • silicone spatula
  • soup spoon 
  • waxed paper
  • thick towel
Now you are ready to begin!


My Favorite No-Bake Cookies!

My Favorite No-Bake Cookies

Prepare the wax paper, before beginning to cook the chocolate base, see note below. 

2 c sugar
1/2 c butter
1/2 c milk
1/3 c unsweetened cocoa

1/2 c peanut butter
2 t vanilla

1/2 c coconut
1 c chopped walnuts 
3 c rolled oats (I do use organic quick oats for this recipe)

2 c mini marshmallows

In a large saucepan, bring the sugar, butter, milk, and cocoa to a boil, let boil for 1 minute. 

Remove from heat, stir in the peanut butter and vanilla until smooth.

Stir in the coconut, walnuts, and oatmeal, mixing thoroughly, then stir in the marshmallows. 

Using a soup spoon, quickly drop onto the wax paper in mounds (rounded tablespoon). 

Let cool completely before packaging for storage or gifts. 

NOTE:  Put a thick towel down and then the wax paper. These cookies are very hot right after dropping onto the wax paper. 

Storage options for My Favorite No-Bake Cookies. Store covered at room temperature for up to five days. Refrigerate or freeze for longer storage. You may notice a change in texture when thawed.
